English flapjack. Ingredients 1/2 cup butter or margarine 1/2 cup packed brown sugar 4 tablespoons golden syrup or corn syrup 3 cups rolled oats 1/4 cup raisins Directions Preheat the oven to 350 degrees F (175 degrees C). In a saucepan over low heat, combine the butter, brown sugar and golden syrup. Cook, stirring occasionally, until butter and sugar have melted. Stir in the oats and raisins until coated. Pour into an 7 or 8 inch square baking pan. The mixture should be about 1 inch thick. Bake for 30 minutes in the preheated oven, or until the top is golden. Cut into squares, then leave to cool completely before removing from the pan. Flapjack Fruit Stack

For the Flapjacks:

2 cups reduced-fat pancake baking mix
1 1/4 cups orange juice or apple juice
1 egg
2 cups sliced fresh berries, peeled kiwi or peaches

For the Fruit Spears

1/3 cantaloupe or 1/8 honeydew melon, cut into cubes
1 kiwi, peeled, cut into cubes
1/2 cup sliced fresh or canned pineapple chunks (packed in 100% juice)

1. Combine baking mix, juice and egg in a medium bowl.
2. Heat nonstick skillet over Medium-Low heat.
3. Spoon about 1/4 cup batter for each flapjack into skillet.
4. Cook until top is bubbly and underside is golden brown. Flip flapjacks and cook until underside is golden brown.
5. To serve, place flapjacks onto four plates and top each serving of flapjacks with 1/2 cup of sliced fruit and a fruit spear.
6. To make fruit spears, thread large chunks of different fruits, one at a time, onto 4 kabob skewers or 4 plastic straws.

Yields: 4 servings. Each serving provides:

Calories: 338
Protein: 8 gm.
Fat: 6 gm.
Carbohydrates: 65 gm.
Sodium: 712 mg.
Cholesterol: 53 mg.

1 1/2 cups sifted flour
1 cup whole-wheat flour
1/4 cup quick-cooking oats
2 tablespoons Splenda sugar substitute or sugar
1 teaspoon salt
1 teaspoon baking soda
4 teaspoons baking powder
1 egg, slightly beaten
1 egg white
4 tablespoons applesauce
3 cups low-fat buttermilk or milk
1/4-1/2 cup of flavoured low-fat plain yogurt
1 orange, zest of


Sift dry ingredients into medium bowl.
Mix together wet ingredients and add to dry ingredients.
Stir only until dry ingredients have disappeared.
Do not over mix.
If you find the mix is too liquid, add more flour.
Cook on a hot griddle, flipping as needed.

1-1/2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/8 teaspoon salt
1-1/2 cups skim milk
2 Tablespoons corn oil
2 eggs whites
Combine dry ingredients in large bowl. Add milk, corn oil, and mix until just moistened. Beat egg white in small bowl until stiff peaks form. Fold into batter. Place greased Teflon heart-shaped molds on greased griddle (medium high). Pour batter into molds. When bubbles begin to form, remove mold and flip pancakes. When done, trim pancakes with knife, if necessary, for perfect shapes. Serve with strawberry garnishes and warm real Vermont maple syrup.
