I can't say exactly but it would probably be because of their different digestive system,the diet that they require does not produce the gasses involved in producing a burp.

They don't pass gas either. Must be a chemical thing where such gasses are never contained in gasseous state but in liquid and expelled. Would make a great tall tale to tell the kids about that's why certain birds became "extinct" (preditors just followed the trail, etc). It's a fact that if you throw Alkaseltzer tablets to seagulls they'll pop (yuk!).

I think its the way the bird eats.
Us humans can eat like slobs bcos we have a huge mouth.
However, the amount of food that a bird can consume at each point of time is limited by its beak.
Therefore this constraint amount of food intake prevents it from burping

I'm guessing it's because of the location of the crop and the esophagus. Since the crop is between the esophagus and the stomach, and burping is the release of gas from the stomach to thru the esophagus perhaps the crop blocks it, not 100% sure.

Birds cannot pass any sort of gas through. Thats why they should never have caffine or carbonated drinks
