Pare 6 apples. cut in half and core. Wrap each half in a square
of pie pastry.Grease a pyrex pan and set apple dumplings side
by side in pan and sprinkle with cinamon, or sugar & cinamon.
Bake at 350 for 30 minutes or until apples are tender and
cooked. Serve hot with cream and sugar or sauce.
Brown sugar sauce
3/4 cup brown sugar, 1/2 cup white sugar, 1 tablespoon butter
2 1/2 cups boiling water, 3 tablespoons cornstarch, 1 teaspoon salt,1/4 cup cold water, 1 teaspoon vanilla
ln a sauce pan over medium heat melt butter and add sugar
stir until dissolved. Be carefull not to sorch. Add boiling water and
stir. Mix cornstarch, salt and cold water to a smooth paste .
Add slowly to sugar mixture stirring constantly. Boil about
10 minutes. Remove from heat . Add vanilla serve warm

Moisten edges of each dumpling with water; bring corners to center, pinching edges to seal. Place dumplings 1 inch apart in a lightly greased shallow baking dish. Combine 2 cups sugar, 1/4 teaspoon cinnamon, 1/4 teaspoon nutmeg, 2 cups hot water and 1/4 cup butter or margarine; stir to dissolve sugar. Pour syrup over dumplings. Bake at 375° for 35 to 45 minutes, or until golden brown. Serve hot with cream or ice cream.
Makes about 1 dozen apple dumplings.

-1/2 cups sugar
1 teaspoon cinnamon(divided)
1 teaspoon nutmeg (divided)
2 or 3 drops red food coloring (optional)
1/4 cup butter
2 1/4 cups flour

Step 1: Making the syrup... Combine in a saucepan 1-1/2 cups sugar, 1/2 teaspoon cinnamon,1/4 teaspoon nutmeg and 2 cups of water. Bring to boiling, lower to a simmer and cook 5 minutes. Remove from heat & stir in butter and optional drops of red food coloring if desired. Set aside.
Step 2: Making the dough... Combine flour, baking powder, & 1/2 teaspoon salt, cut in shortening until mixture looks like coarse crumbs or small peas. Add milk and mix just until all is moistened.
Form into a ball. Roll into a 12 x 18 inch rectangle on a floured surface. Cut into six 6 inch squares.
Step 3: Assembling the dumplings... Combine 1/2 cup sugar and 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg in a small mixing bowl. Roll each cored and peeled apple in the sugar & spice mixture until well coated, place one apple in the center of each 6 in. square and dot with additional butter. Moisten the edges of the dough and fold each corner to the top and center of the apple and pinch the edges together. Place in a 13x9x2-in. baking dish. Pour the cinnamon syrup over the dumplings. Bake at 375 for 40 -45 minutes or until apples are tender when tested with a knife.
To Serve... Best, if served warm. Spoon sauce over the dumplings and serve with vanilla ice cream if desired.

In a medium saucepan over medium heat, combine 1 1/2 cups sugar, water, 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg and food coloring. Bring to a boil, remove from heat and stir in 3 tablespoons butter. Set aside.
In a large bowl, combine flour, baking powder and salt. Cut in shortening, using knives or pastry blender, until mixture resembles coarse crumbs. Pour in milk, all at once, and stir to form a dough. On a floured surface, roll dough into a 1/4 inch thick, 12x18 rectangle. Cut into 6 - 6 inch squares.
Place a whole, peeled and cored apple in the center of each pastry square. Dust each apple with a mixture of the of sugar, cinnamon and nutmeg. Dot with a tablespoon of butter. Moisten the edges of the pastry square, bring the corners together at the top of the apple, and press edges together to seal. Place dumplings 1 inch apart on a baking sheet.
Pour the syrup over the dumplings and sprinkle with additional sugar, if desired.
Bake in preheated oven for 35 minutes, until apples are tender.

I don't know how to make them but if you don't get a good recipe I can get you one from my sister. It is apple season in Blue Ridge where she lives and there are apple orchards everywhere up there. She is a great cook so she would have a great recipe for apple dumplings and fried apple pies.

Double-Caramel Apple Dumplings:
Notes: Make the caramel sauce without the rum; if desired, stir rum into sauce after using 1/4 cup in step 1. You can prepare dumplings through step 4 up to 1 day ahead; chill sauce, dumplings, and egg mixture separately airtight. Bake chilled dumplings as directed.
2/3 cup pecan halves
Caramel sauce (see notes)
4 Golden Delicious apples (4 to 6 oz. each)
1 tablespoon lemon juice
1 sheet frozen puff pastry (half of a 17.3-oz. package), thawed
1 large egg, beaten to blend with 1 tablespoon water
Vanilla ice cream (optional)
1. Set aside four pecan halves; chop remaining nuts. In a bowl, mix chopped nuts with 1/4 cup caramel sauce.
2. Peel apples; core each, creating a 1-inch-wide hollow from top to bottom. Place apples in a bowl and coat with lemon juice.
3. On a lightly floured board, roll puff pastry into a 12-inch square. Cut into four equal squares and center an apple upright on each. Push nut mixture equally into apple hollows.
4. Brush egg mixture over a 1/2-inch-wide border around each pastry; reserve remaining egg. To wrap each dumpling, with floured fingers bring two opposite pastry corners up over apple and pinch tips together. Repeat with remaining two corners. Firmly pinch all tips together; pinch each seam, then fold over about 1/8 inch along the seam and pinch again, leaving no holes. Space dumplings evenly on a buttered 12- by 15-inch baking sheet.
5. Bake in a 375° regular or convection oven for 20 minutes. Dip reserved pecan halves in egg mixture (save remaining egg for other uses or discard); press a nut half on top of each dumpling. Bake until pastry is deep golden, 10 to 15 minutes longer in a regular oven, about 5 minutes in a convection oven.
6. With a wide spatula, transfer dumplings to plates. Accompany with remaining caramel sauce and ice cream, if desired.
Yield: Makes 4 servings

a quick and easy way i found to make them is get some cooking apples granny smiths slice them hold in vinegar or lemon water keep from turning black......buy a pack of egg roll wrappers and on this wipe with butter and sprinkle cinnamon and sugar place a apple on the center and fold til apple in side seal by pressing the edges together. bake in 350 oven until crisp.......serve with maple syrup and sprinkle with powdered sugar for garnish....
