Black olives are the ripened fruit and green are the unripe ones. In taste, they are very close. In appearance and presentation - this will affect your choice about which one to use. Personally, black olives are "dramatic" against red or white sauce and green is festive (i.e., Christmas).
Whichever you decide to choose, olives are extremely good for the health.

I eat loads of these straight from the jar. Hmmm.
You can put green ones with all kinds of foods as for black ones they are rubbish. Boring.

Black. They're luscious by themselves and much more versatile in recipes than the green ones, which are too salty.
