Chocolate Cake
2 cups of flour
2 cups of sugar
¾ cup of unsweetened cocoa powder
2-teaspoon of baking soda
2 tsp cream of tartar
1½ teaspoon of salt
3 eggs
2 teaspoons of vanilla flavoring
¾ cup of softened margarine
1 and ½ cups of milk
Preheat oven to 350 degrees
Prepare cake pan or pans by lining first with aluminum foil, shiny-side down and then spraying the aluminum foil will a spray cooking oil.
Add all of the dry ingredients to a large mixing bowl and blend together well.
In another bowl add the softened margarine, eggs and vanilla flavoring.
Blend the liquid ingredients together and gradually add in all of the milk.
Pour the liquid ingredients into the dry ingredients and beat with an electric mixer until smooth and creamy.
Pour the cake mixture into your prepared cake pan or pans and bake at 350 degrees for approximately 30 minutes or until you can push a toothpick down into the middle of the cake and have the toothpick come back out completely dry.
Once it is determined that the cake is done, remove the cake pan from the oven and let it set on a cooling rack for 5 minutes, then place your cake dish on top of the cake and carefully holding onto both the cake dish and the cake pan, flip the cake over onto the dish. Carefully without being burned, lift the dish off the cake and sets aside, and then gradually starting from one corner remove the aluminum foil slowly. If you are making a layer cake, gently remove the second cake from the baking pan by the aluminum foil edges and set that cake, aluminum foil and all on a cooling rack until all the layers are cool enough to frost.
Frost the first layer of cake once cooled and then place the second layer on top, aluminum foil side up, then pull the aluminum foil off the top once the layer is positioned.

Mayonnaise Cake
Mayonnaise makes this cake nice and moist.
INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

This apple cake is moist and melt in your mouth good...
1)Apple Cake:
1 c. butter
1 1/2 c. sugar
2 eggs lightly beaten
2 c. flour
2 tsp baking soda
2 tsp cinnamon
2 tsp vanilla
4 tsp lemon juice
1/2 tsp salt
4 c. peeled, chopped apples
Cream first three ingredients, beat 1 minute. Combine dry ingredients and add to creamed mixture, beat well. Fold in apples.
Heat oven to 350. Bake in greased 9 x 13 pan until toothpick inserted in center comes out clean.
2) Pumpkin Gooey Butter Cake:
CRUST:
1 box yellow cake mix.
1 stick butter, melted
1 egg
FILLING:
1 pkg cream cheese
1 bag powdered sugar
1 stick butter
3 eggs
1 tsp vanilla
1 can pumpkin
cinnamon, nutmeg
To make crust, beat all until mixed and moist. Lay in greased 11x7 pan
and pat down into pan.
Mix cream cheese, and powdered sugar. Slowly add butter. Add eggs and
vanilla. When creamed, fold in pumpkin, cinnamon and nutmeg. Pour
over crust.
Bake 45 min at 350
Can substitue pumpkin and spices with fruits
Enjoy!

Crazy Chocolate Cake--3 Cups flour; 2 cup sugar; 2 tsp. baking soda; 1 tsp. salt; 1/3 cup cocoa; 2 tsp. vinegar; 1 tsp. vanilla; 3/4 cup vegetable oil; 2 c. cold water. Mix dry ingredients together in 9x13 inch pan and stir with fork. Make 3 holes in these ingredients and put vinegar in one hole, vanilla in one; and oil over all three. Pour cold water gradually over this and mix with fork and spatula until smooth. Dont use mixer! Bake at 350 for 30 to 40 minutes.

Champagne Cake Recipe courtesy Sandra Lee
Cooking spray
1 box (1-pound 2 1/4-ounce) moist white cake mix
1 1/4 cups extra dry Champagne
1/3 cup vegetable oil
3 large egg whites
1 can whipped white frosting
1/4 teaspoon Champagne flavoring
Silver mini disco balls, optional
Silver Dragees, optional, if available in your area
Silver edible glitter, optional
Preheat the oven to 350 degrees F. Lightly coat the bottom of a 9 by-13-inch cake pan with cooking spray.
In a large mixing bowl combine the cake mix, Champagne, vegetable oil, and egg whites. Beat on low speed with an electric mixer until just combined. Scrape down the sides of the bowl with a rubber spatula and continue beating on medium speed for 2 minutes. Pour into the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Remove it from the oven and cool completely.
Empty the frosting into a small bowl and add the Champagne flavoring. Stir to combine and set aside.
To make the mini-cakes, with a 3-inch ring mold (or use an 8-ounce pineapple can with top and bottom removed) stamp out 6 cakes. Slice the cakes in half, horizontally, to make layers. Frost the bottom layer, replace the top layer and frost the tops and sides of cake. Decorate with the disco balls, Dragees, and glitter, if using.
Cook's notes: Champagne flavoring and edible glitter are available where cake and candy making supplies are sold. Dragees, or silver candy balls, are not available in all states.

Stir in pineapple then fold in coconut. Bake for 25 to 35 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Frosting:
Mix crushed pineapple, rum, and vanilla instant pudding. Beat until it thickens. Fold in 1 container of Cool Whip. Frost cake and sprinkle top with coconut or toasted coconut.
* To toast coconut: Spread coconut in shallow pan. Bake at 350° for about 15 minutes, stirring frequently, until lightly browned.
