Most soups are very simple and easy to make. Get pieces of a whole chicken and place in a very large stewing kettle and boil until the meat falls off the bones. Take out the bones and add in just about any combination of veggies you can imagine along with salt and pepper and any other favorite seasonings and/or herbs. Simmer until the veggies are tender and serve. It is just that simple. Do the same with beef cubes or any other meat or poultry or fish too.

All soups are cheap and easy... just mix water, veggies and whatever else you want and boil it up... You can mix anything to it... be creative and taste all the time till you are happy with the result.

Im just about to make mushroom soup! Water (2L),1 Onion, Mushrooms (500grams), 1 packet Mushroom Powder soup, about 1/2 cup cream and salt and pepper. Boil up for about 20 minutes and blend. Serve hot with hot crusty rolls and pour about a table spoon of thickened cream on top of the soup.

Caldo de Queso

Fry chopped onion and garlic until soft. Add cubed potatoes and fry for a couple minutes. Add pinch of oregano, salt, and black pepper to taste. Add chicken broth or water. Bring to boil and simmer until potatoes are cooked. Add a small can of green chiles. To serve put shredded white cheese in a soup bowl (Monterey Jack is good), ladle soup over. You can top with crushed tortilla chips if you like.

Vegetable and Barley Soup -a chunky meal of a soup, healthy and cheap

Ingredients:

5 or 6 large potatoes, peeled and cubed

2 leeks cut into round slices

3 carrots, roughly chopped

5 celery sticks, cut onto chunks

1 cup of dried pearl barley

a few leaves of dark green cabbage, kale or other greens, chopped

enough water to cover

Salt and pepper to taste

Very simple to prepare this one! Place all your vegetables except the chard in a large pan with the barley. Cover well with water, boil and simmer until everything is cooked. Add the greens and salt and cook for another 5 minutes.

Leek and Potato Soup

A chunky, filling winter soup. These quantities make a large pan of soup - they can easily be reduced by half if desired.

Ingredients:

2 tablespoons of sunflower oil

2 medium leeks, sliced widthways into thin round slices

2 or 3 cloves of garlic (optional)

6-8 large potatoes, cut into chunks (about 2 or 3 cm.)

2 tablespoons of white flour

1 cup of frozen peas (an optional extra)

5 or 6 cups of water

Salt and pepper to taste

Cook the leeks and garlic, if using, in the sunflower oil for a few minutes then stir in the flour. Add one cup of water and stir well to blend. Add the potatoes and the rest of the water (you may need to adjust the quantity slightly - make sure all the vegetables are well covered). Bring to the boil, stirring occasionally to prevent sticking, and then turn down to simmer until the potatoes are just about cooked. Finally, if using, add the peas and cook for a further few minutes until tender. Season to taste.

Take what's left of a beef roast, add a can of corn, a can of green beans, a can of sliced carrots, and some water. Before you add the water make sure to mix it with some brown gravy mix so you have a little bit of thickness to it. Take a little oregano, some basil, a pinch of salt, and some black pepper and you have a nice beef stew.

I've been making stews for myself lately.

Go buy some granulated bullion. Follow directions and boil in water to make a broth (Add salt, pepper, and other spices as needed).

Cook chicken, steak, pork, whatever meat you want **BEFORE** putting it in the water. Then throw in chopped carrots, onions, celery, whatever kinds of veggies you like. Cover pot with a ceramic plate and let simmer for maybe... 20 minutes to a half hour.

Enjoy. :D
