This ever-so-elegant soup is almost embarrassingly easy to prepare. Canned chicken broth is reduced to intensify the flavor and infused with garlic, fresh herbs and spices-a tea infuser, or
gredients:
Qty. Measurement Description
2 each garlic clove, unpeeled
2 sprig fresh rosemary
1/4 teaspoon hot red pepper flakes
5 1/2 cup low-sodium chicken broth, defatted
8 ounce cheese tortellini, low-fat, fresh or frozen
2 tablespoon grated Parmesan cheese, (optional)
1/4 teaspoon freshly ground black pepper, or to taste
Cook:40 Min (cooking time)
Preparation:
1. Crush garlic cloves with the flat of a chef's knife (do not peel). Tuck the garlic, rosemary sprigs and crushed red pepper into a teaball (or cheesecloth bag) and place it in a large saucepan. Add chicken broth and bring to a boil. Boil until reduced by about one-fourth [to 4 cups in original recipe], 15 to 20 minutes, skimming off any froth that rises to the surface. Remove the teaball.
2. Meanwhile, cook tortellini in a large pot of boiling salted water. Following package directions, cook until tender. Drain the tortellini and add to the infused broth. Ladle into bowls and serve with Parmesan, if desired, and a grinding of black pepper.
