Fudge= soft creamy chocolate usually cut in small squares
Cake= light, spongy sweet (bread like) usually with frosting on top, usuallybaked in round pans, and cut into what looks like a wedge
Pastry= sweet & flakey baked in individual peices, comes in lots of different shapes. Often has a filling.
All are called desserts, all are high in calories, all are junk food (not healthy) unless the recipe is modified to become a healthy food.

It's simple:

Fudge is similar to a soft chocolate bar. There are different flavors, such as peanut butter or peppermint, but it's usually soft chocolate cut into squares.

Pastry can be anything from danish, cream puffs, or baklava. People usually associate it with a light, flaky dough.

Cake can be made from the mixes in boxes, or from scratch. Some is dense, some fluffy. It consists of flour, eggs, sugar, (sometimes) cocoa, etc. It's usually frosted and sometimes decorated.
