Usually, when you add "is it" or "isn't it" at the end of the sentence, you are saying it to question your own supposition. So it should be the opposite of the first part of your sentence. In other words, if you use "not", as is indicated in "don't (do not) in the first part of your sentence, then do not use "not" in the second part of your sentence.
Looking at the sentences:
"I don't think it's easy, is it?" - this is correct (only first part uses a not)
"I think it's easy, isn't it?" - this is also correct (only last part uses a not)
"I don't think it's easy, isn't it?" - this is incorrect (both parts use a not)
"I think it's easy, is it?" - this is also incorrect (neither part uses a not)
Then again another way that I prefer is:
"I don't think it's easy. What do you think?"

Neither one makes sense. You'd say "I don't think it's easy. Is it?" 2 sentences. Or add a but..."I don't think it's easy, but is it?"

Try making two sentences out of it. A statement and then a question. "I don't think it's easy. Is it?"

"I do not think it is easy, is it?" is.

It's "is it". "Isn't it" would be used if the sentence began "I think it's easy."

Actually, neither. You would say, "I don't think it is easy." Then ask "Is it?" You would not combine them.
