Seriously, when the temp is in the 70's, it is way too hot to be hanging meat. I get concerned about hanging deer when it is in the 50's.

I'd recommend getting the deer to a butcher or cut it up right away.

If you can not, if you have a concrete floor in the garage, lay the deer on the concrete floor as it is usually cooler than the air. Once on the floor, put a large bag of ice in the body cavity (or two to three small bags).

Get it to the butcher ASAP

I think hanging your game is rarely a good idea. I've talked to several retired butchers that hunt, and they have all said to get in into the freezer as quickly as possible.

We've processed dozens of our own animals this way (as quickly as possible) and are never dissappointed. Much of the gaminess of wild meat is actually the beginning stages of decay.

This 'aging the meat' fallacy gets promoted by meat processors who don't want to be rushed, but like to spread the work out for several months so the hands they hire will stay on.

The fact that it is 70 degrees should worry you too. Meat should never be kept at temps higher than 40 degrees, as it begins to decompose. Not all decomposition will get you sick, but it does affect the flavor.

70 degrees is to hot to hang game. It needs to be at least 60 perferably much cooler. You don't need to hang game like you would a beef as they do not have the amount of connective tissue (collagen) in the muscle fibers. You hang beef to allow for some connective tissue to break down giving you tender cuts. The only reason their is for hanging wild game is to allow for some of the moisture to evaporate and make easy of handling better while butchering.

well this is no brainer here . its hot by hunters standards so ya gotta get er done now if you want best results on that tender loin or deer burger . you can wait about `10 hours if deer was hung in late afternoon after dark but longer you wait the worser the meat will taste and closer youll get to letting you meat turn and we dont like that as hunters . a trick when hunting during 70s is right after you kill deer stuff two bags of ice in chest cavity and leave them thare until your ready to clean them or take them to someone . this dosent keep them from turning but it dose give you many more hours to wait and if its sunny this really helps in back of pickup.

hi there , get him skinned and to the butcher, or if your doing it yourself do it now ,70 deg. is to hot for hanging meat ,most of your wild meat need not be aged, but if you want to age it for 7 to 10 days then it must be done in a cooler at the proper temperature.

You should butcher it now. 70 degrees is way to hot to be storing meat. Meat needs to be stored in the 40s degree range.
