The term "sophisticated" is subjective and is more often used by people who think that someone else is "more" than they are. To be truly sophisticated, be real. Be who you are. Don't compare yourself to others because you only see what they want you to see. Usually, when you think someone is perfect, they're as far from it as they can be. Know that you are perfect as long as you're being true to yourself. Follow your gut and your heart. Read novels and praise proper behavior.
Practice speaking clearly and precisely.
Brush up on pop culture and current events.
There are places where you can still take etiquette classes, just seek them out. You can also do it yourself by being more conscious of how you speak your body language and just by being more polite and gentle.

There are many levels of sophistication. If there is a habit you have that you believe doesn't fit in with the crowd slightly above your current status, then stop doing it. You really must be more specific if you want a useful answer.
Generally speaking, when in the company of people you aspire to emulate, the best thing you can do is rethink your every move and ask yourself what you would think if you were one of those people. Mind your mouth being the first thing you should be concerned with. Read books on etiquette and copy what you read. It may feel like a pretense at furst, but it soon becomes second nature. But the language you use really is the first step.
I'm a good example to this plight. I am not from a good family and I have been in "less than desireable" relationships and circumstances. But I landed a good job amongst decent people and "faked" sophistication by watching my coworker and mentor. It became part of me and I value the experience. The sad thing is that my past was "outed" by a stalker and I was terminated for my former behavior. It's amazing how quickly old habits snap back and I fought like the devil in a way I thought I had left behind. I won the war in the end, but I'm not proud of the relapse.
Just work at it. It is a good thing and it's worth it in the end if only to yourself.
