I LOVE chocolate

Here's a recipe:

Chocolate Cakes with Liquid Centers

INGREDIENTS:
1/2 cup butter
4 (1 ounce) squares bittersweet chocolate
2 eggs
2 egg yolks
1/4 cup white sugar
2 teaspoons all-purpose flour

--------------------------------------------------------------------------------

DIRECTIONS:

1. Preheat oven to 450 degrees F (230 degrees C). Butter and flour four 4 ounce ramekins or custard cups.
In the top half of a double boiler set over simmering water, heat the butter and the chocolate until chocolate is almost completely melted.

2.Beat the eggs, egg yolks and sugar together until light colored and thick.

3. Beat together the melted chocolate and butter. While beating, slowly pour the chocolate mixture into the egg mixture, then quickly beat in the flour and mix until just combined.

4. Divide the batter between the four molds and bake at 450 degrees F (230 degrees C) for 6 to 7 minutes. The centers of the cakes will still be quite soft. Invert cakes on serving plates and let sit for about 15 seconds, then unmold. Serve immediately with fresh whipped cream, if desired.

Old-Fashioned Chocolate Pudding:

I love this dessert from the Jimtown Store Cookbook, but I can't bring myself to make it often because of the high fat content.

6 tablespoon(s) unsweetened cocoa powder
6 tablespoon(s) plus ½ cup sugar
1/4 cup(s) cornstarch
4 cup(s) half-and-half
2 large eggs
4 large egg yolks
1/2 teaspoon(s) salt
1 1/2 cup(s) semisweet chocolate chips
1/4 cup(s) unsalted butter
1 teaspoon(s) vanilla extract

1. In a small bowl, sift together the cocoa powder, 6 tablespoons of sugar and the cornstarch. Gradually whisk in 1 cup of the half-and-half; continue to whisk until smooth.
2. In a large bowl, thoroughly whisk together the eggs and egg yolks.
3. In a heavy medium saucepan, stir together the remaining ½ cup sugar, the remaining 2 ½ cups half-and-half, and the salt. Set over medium heat and bring just to a simmer. Whisk in the cocoa mixture. Bring to a boil, whisking constantly. Lower the heat and cook, whisking constantly, until very thick, about 3 minutes.
4. Gradually whisk the hot cocoa mixture into the beaten eggs, whisking constantly to ensure that the eggs don’t curdle. Return this mixture to the pan and set over low heat. Cook, whisking constantly, until the mixture just reaches an obvious boil.
5. Remove from the heat and immediately add the chocolate chips and butter. Stir until smooth. Stir in the vanilla.
6. Divide the pudding while warm among 8 cup or ramekins or spoon into a single, medium-size serving bowl. Cool to room temperature, then cover with plastic wrap and refrigerate until cold, at least 4 hours. (Pudding can be prepared up to 3 days in advance.)
