ive found that they should be blanched in vinegar and then processed or blended, i was given these peppers and would love to try them out without wasting them

Louisiana Hot Pepper Sauce
3 cups distilled white vinegar
2 teaspoons salt
2 pounds cayenne or jalapeno peppers, seeded and chopped




Simmer vinegar, salt and peppers for 5 to 10 minutes.
Process in food processor or blender. Seal in small sterilized canning jars and place in a cool, dark place to age for about 3 months.
Strain a portion of the sauce when ready to use; store in refrigerator.

most hot sauces do not use chili's,,,,,,. they are used more in BBQ sauces...... but not all, some do contain chili peppers.

they are used more, as spicing up food dishes,,,, soups and omelets for instance.... and of course chili.
most Louisiana hot sauces are cayenne and habenero and even red peppers.. they are better for hot sauces.

doesn't mean you cant use these chili's.... just pulverize them ( some prefer to completely dry them first) in a blender and add some salt and vinegar as base,,,, from there,,, water and any other spice you want to add.

Make sure when you make the hot sauce to use the proper herbs/spices. Do you want a smokey/spicey flavor or just spicey?

Spices: Cuman, Pepper flakes, Cayenne Pepper
