Description
Turmeric is the dried root of the plant Curcuma longa. Noted for its bright yellow color, it is related to and similar in size to ginger. Turmeric's flavor resembles a combination of ginger and pepper.

There is no law that mustard has to be yellow! Having it be dark yellow or even brown is just going to emphasize that it is HOMEMADE!

Tumeric is what makes yellow mustard yellow. It is very brightly colored, with a somewhat bitter taste.

In mustard it is really used for it's color not taste. So I would suggest leaving it out. You will still get mustard, but it will be more beige or brown, like Dijon.

Tumeric has a chemical reaction with other ingredients. Don't substitute anything, the end result will not be the same.

tumeric is a very potent spice...if you are making mustard, I wouldn't recommend tumeric. I would use ground mustard instead. Tumeric is a middle eastern spice that is used mainly in indian style cuisine.

OK Sweetlips how about this:

Cilantro has become common in American cookery only in recent years. But, known as Chinese parsley or Mexican parsley, it has been a staple in other cuisines for centuries. Its flavor is a keynote of many Hispanic and Oriental dishes. Cilantro's distinctive flavor has been called reminiscent of lemon and sage or caraway and cumin. It is frequently used as a less pungent substitute for turmeric. Our Cilantro Pesto can be used virtually anywhere you would use fresh cilantro. Cilantro makes a distinctive subtle pesto. This sheet has eleven wonderful ideas for using this pesto from Cilantro Pesto Veggie Quesadilla to Grilled Swordfish with Cilantro Pesto.

you might find a substitute but since mustard has a definite taste, it might not taste like mustard anymore. might be worth a run to the store.

Saffron
Curry Powder has turmeric in it....

Yellow mustard usually gets it's color from the mustard grains itself... use powdered mustard (Coleman's is one brand - yellow tin)
