What type of interest do you mean? So that you can find a job? Start with the things that you like to do and then think about the jobs that exist with those things.
If you are trying to develop new interests then take a course on something new and then stick with what you like best.

Here is the council that I give students and new graduates:
Go to any major library and look in the reference section for a set of books called the Encyclopedia of Associations. As the librarian if you need help.
You should find three books:
The first book lists thousands of professional organizations all over the USA. Look up any work that you think might be of interest to you. More than likely, you will find one or more references to a group in that field. You will find a code number for each reference
When asked what a professional society is, I usually say that most people know what a fraternity or sorority is in school. Well, after you get out of school, where do you find groups of people who think/like the things that you do! They are called professional societies.
Books two and three list each of the code numbers from book one and give details about that particular group. There you should find phone numbers, web sites and basic information about the group.
Call or email as many of these groups as you can. Ask if there is a local chapter/section of the group in your area. Find local people who might be in the group you are interested in and talk with them about the field/profession/business. You might also want to ask the headquarters group for membership information as well as if they have a Body of Knowledge and a publications catalog.
Once you do these things, you will start getting an idea if you are really interested in joining them or not.
Mainly, look for something that you can have a lot of fun with – thus your interest and hopefully your employment will be in the same area.

You could also take your general education classes at your local college - they are designed to help you figure out what you like or don't like and they are very informative.
Get some class catalogs from your local college or training center and circle everything that interests you then rate them with stars and concider trying new and different things.
Also, try going to the library and just walking down the different rows of books and read the titles - when you have a lot of time to browse and open and look at books that interest you.
