This is something I would like to know myself. Mine started several years ago after I had surgery done and I felt like it was a reaction to the anesthesia. Only occurs on my left hand and will last for two or three days. Only happens when I get real sick or have any kind of anesthetic. I have asked several doctors and have not found out why either. Doesn't hamper my life and work, so I have just learned to live with it. I will be watching your questions for answers too!!

The obvious answer of course is for a Dermatologist to have a look at it.
It sounds as though it could be a dermatitis infection of some sort, perhaps Eczema or Psoriasis.
I had a similar condition years ago where the skin actually would crack and bleed. Mine was caused by exposure to certain chemicals like Acetone and MEK where I didn't have the proper glove protection and caused a "defatting" of the skin. It has since cleared up, but at the time was extremely bothersome and painful.

I am a nurse who works in a family practice clinic with 5 doctors.
Has she recently changed washing soap-laundry or body? Has she eaten or drunk anything in the last two weeks that she had never tried before? Is the peeling painful, bleeding, or is there alot of heat to the touch of her hands?
There are some things to try such as Benadryl cream or oral pills iif she has any itching and isn't allergic to antihistimines.
She might try using a hand soap for sensitive skin followed by lotion for very dry skin applied several times a day and applied heavily at bedtime using gloves to let the lotion soak in overnight.
She should keep track of the peeling, any other problems she has with her hands with it, and what she tries for it, then giving her doctor or their nurse a call to discuss the problem further.
