I have a good, solid Cuisinart processor with a new blade, but when I try to make fresh breacrumbs in it, I always end up with the same problem. I tear the bread into pretty even pieces of about an inch before I pulse them,, but they don't come out evenly-sized or even close. I always end up having to fish the biggest (about 1/2') chunks, and by that time, some of the other crumbs are way too fine. Does someone have a suggestion? Thanks.

Get yourself a good blender with a glass container. I always make my own bread crumbs and it works the best. All you have to do it tear the bread up and hit pulse. You will have to hit pulse a few times to get the consistency you like but it works best!

Sounds like the bread is too moist. I use dry bread and just toss it in the processor in chunks.

Try drying the bread out slightly in the oven -- don't let it get brown, but just barely dry. That, or else let the bread sit out of the wrapper for a day before using it.

You need to use "day old" bread. Let the bread set out for a couple of hours before you put it in the Cuisinart.

I do not use electrical food processor to make breadcrumbs, I use a grater (the one you use to grate cheese or carrots) and I toast the (1 or 2 days old) bread slice before I grate it, this can make sure the bread is dry enough.

Sometimes, old method is more convenient, would you like to try this one?

Let your bread sit out overnight, uncovered, then process. Don't crowd the FP bowl.

Usually "fresh" breadcrumbs signifies that the crumbs have not been toasted, salted, or otherwise seasoned like the ones in the paper cans. (ie: "Italian" bread crumbs)

I take bread and tear it up, do not hit pulse, let it just keep going till all are small. I do this very often and have never had any troubles.
