Yum! Yes, they're great! Do you have a Red Lobster near you? They serve Escargot. I think you could probably buy canned snails and the powder paquets to make the sauce at your local grocery store. Look on the Internet for the recipe. It's way cheaper to make them at home, than to buy them in a restaurant!

Hi There, well this is a big subject!!!
It would seem that you have already cooked them!
Normally, when you buy live snails you should prepare them for cooking and this consists of feeding them on herbs or vegetable matter. Maybe other people have a different opinion on this.
My memory on htis is that at least two days are needed to degorge the snails. I think you then have to starve them for a period (2 days as well).
Killing them is done by putting salt on them.
In order to cook them you should prepare a stock most probably of vegetables then poach them in it for 20 minutes.
You remove them from the shells. The comestible part is the spiral itself. If you are unsure go buy a cheap can of them from a good delicatessen. I am not sure that this is obvious to you but if not have a taste of each part and I am sure you will discover what is edible. It should not taste muddy, if it does then you have not degorged them of their toxins and earth. See before.
The the traditional way of preparing them is to make a paste of parsley, garlic and butter (with salt and pepper to taste, of course). Then stuff this paste plus the snail in to a shell and heat them for 15 mins in a very hot oven.
Wine of course: a dry white wine like Sancerre or Mentou Salon or a dry chenin (Saumur; Montlouis etc).

I have had sea snails before and I'm not certain what kind of snails are used for "escaro." My good friend purchased the snails from an Asian specialty supermarket. I remember the snails tasted very similiar to octupus, similiar texture. We ate the snail by poking into the shell with a pin and extracing from within. I think Irina is messing with you.

I ate some at a French restaurant in Salt Lake City, Utah about thirty two years ago. I thought they tasted tough but my mother loved them. I remember they were served in these beautiful shells and that the shells were in a shallow bowl of a white wine mixture of garlic and butter.

I have had it in restaurants, its very rich and buttery and garlicky, you can't even taste the snails! Tasty.
My friend has made it at home with canned snails. I guess you can buy them in the supermarket but I haven't noticed them.

they are usually sauted in garlic butter. it is served as an appitizer in special bowls. They taste like clams.
