Basically its done by impregnanting the pistil of one plant with the pollen of another. You can also graft plants together using a special tape. Here's an article about how to do it:

Grafting doesn't really make a hybrid, a hybrid is a cross between two species, usually closely related species. Gene guns are a *very* sophisticated technique as is protoplasmic fusion ... not an option for home hybridisers. Pollen transfer from one species to another is fairly easy but successful crosses do not usually result. You also have to take care that your female plant (the one you are tranferring pollen to) doesn't self-pollinate or get pollinated by another plant of the same species.
