Baked Zucchini Chips

Prep Time:5 Minutes Cook Time:10 Minutes Ready In:15 Minutes Servings:4)

INGREDIENTS:
2 medium zucchini, cut into 1/4-inch slices
1/2 cup seasoned dry bread crumbs
1/8 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
2 egg whites

DIRECTIONS:
Preheat the oven to 475 degrees F (245 degrees C).
In one small bowl, stir together the bread crumbs, pepper and Parmesan cheese. Place the egg whites in a separate bowl. Dip zucchini slices into the egg whites, then coat the breadcrumb mixture. Place on a greased baking sheet.
Bake for 5 minutes in the preheated oven, then turn over and bake for another 5 to 10 minutes, until browned and crispy.

1 - Cut off at 2/3 length wise and Hollow out a small channel. Stuff with feta cheese and bacon bits and recover with top of zuchini. Sprinkle top with Greek Dressing, then wrap in aluminum foil and grill package for 10 minutes in oven or on grill top.

2 - Cut into rounds and saute with onion, sesame seed, salt/pepper, and soy sauce until just beginning to become tender.

Don't let it get soggy - it won't be good!!!

Try slicing it one half inch thick, sautee in olive oil and chopped garlic (one clove to two zuchinis) on low heat, then pour three tablespoons of tomato sauce or chop one ripe fresh tomato, add a little salt and pepper (allspice would be good), and cover for 3 to 4 minutes, still on low heat.

Zucchini Casserole with Red-Pepper Aioli:

With all the liquid that's added, this ends up being a rather soupy casserole. It's a heartier French onion soup that's packed with vegetables and makes a meal on its own. We've added red peppers to the typical mayonnaise and garlic of a traditional French aioli. You'll have some left over; refrigerate it for later uses, such as for a sandwich spread.

2 teaspoons olive oil
3 cups sliced onion
6 (1/2-inch-thick) slices diagonally cut Italian bread (about 6 ounces), toasted
2 (14.5-ounce) cans no-salt-added diced tomatoes, undrained
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
3 garlic cloves, minced
Cooking spray
1 pound zucchini, halved lengthwise and thinly sliced (about 3 cups)
2 cups (8 ounces) shredded part-skim mozzarella cheese
1 (15.75-ounce) can fat-free, less-sodium chicken broth
1/4 cup Red-Pepper Aioli

Preheat oven to 375°.

Heat oil in a large nonstick skillet over medium-high heat. Add onion; sauté 15 minutes or until golden brown.

Cut 2 bread slices into 1-inch cubes; set aside. Drain tomatoes in a colander over a bowl, reserving 1/2 cup liquid; discard remaining liquid. Place tomatoes in a medium bowl. Stir in basil, thyme, pepper, and garlic.

Place 1/2 cup onion in the bottom of a 3-quart casserole dish coated with cooking spray. Arrange 2 bread slices, half of the remaining onion, half of the tomato mixture, half of the zucchini, and half of the cheese over onion in dish. Repeat layer; top with bread cubes. Pour 1/2 cup reserved tomato liquid and broth over casserole. Cover and bake at 375° for 30 minutes. Uncover casserole and bake an additional 25 minutes or until top begins to brown.

Spoon 2 cups casserole into each of 4 shallow bowls; top each serving with 1 tablespoon Red-Pepper Aioli.

Totals include Red-Pepper Aioli.

Yield: 4 servings

This is sooo simple and is my fav thing to do. frying gets a bad rep but fried veggies in a light oil such as EVOO makes it crispy on the outside and melt in your mouth on the inside!
Peel it then slice it.... Dip into egg and shake off excess. Then dredge (coat) the zuchinni pieces in a mixture of flour, a little cayanne pepper, salt, pepper, and some italian breadcrumbs. (the dry mix should be just that, mixed together) Shake of excees and cook in a sautee pan ..( you know that cookwear thing that you brown meat in with EVOO in it. )(extra virgin olive oil) heated to 350 degrees. turn after about 3 minutes to cook the other side and voilaa...... you have you very own fried Zuchinni with a cajun kick.. Yumm

I had zucchini pancakes today! Fried. They were OK. My cat liked them too.

Zucchini is best steamed, and I prefer summer squash to Zucchini. You can buy a thingy at Wally World that will covert any covered pot into a steamer. It will cost you about five bucks. It's a neat little thing. It folds up to look like a Christmas tree when not used. You will find it with the other kitchen gadgets.

Fried Zucchini and Mushrooms

Dip sliced vegetables in egg wash, then Italian bread crumbs.
Place a few in a deep fryer with oil to cover.(don't overcrowd), and cook till golden brown.
Can also fry in oil in frying pan, turn when browned on bottom.

Remove and drain on paper towels.
Sprinkle with Parmesan cheese and serve immediately.
Use ranch for a dip if desired.

Think I'll be getting the deep fryer out soon.

Try grilling. Cute it length wise. Put olive oil, salt & pepper on it a cook it a couple of minutes per side. I often sprinkle parmesan cheese on it before serving.
