Hmm...looks like my ambrosia is different from everyone else's so try what looks good to you. I use 1 can of fruit cocktail, 1 can of mandarin oranges (both drained - you can drink the juice or mix with a drink), 1 cup of coconut, one small tub of cool whip and mix it all together. My mom adds maraschino cherries, but I hate them. It's wonderful. Ambrosia means: food of the gods and this is it!

Ingredients:

1 can of fruit cocktail, drained
1 pkg. instant pistachio pudding mix
1 cup of milk, 2% recommended
1 small container of cool whip
1/2 bag of mini-marshmallows
1/2 cup coarsely chopped walnuts
1/2 jar marachino cherries, drained

Prepare pistachio pudding by mixing with only 1 cup milk - this will thicken quickly because you are only using 1/2 the milk.

Add entire container of cool whip, fold in gently

Add remaining ingredients, folding gently - do not overmix.

Refrigerate overnight. Serve with additional cool whip or whipped cream on top, remaining marachino cherries to garnish.

Serves 6-8
