I love to cook, as long as it is quick and easy and tastes good. It can have a long cooking time, as long as it is quick to put together.

Y'all are giving me some great recipes, so it's gonna be difficult to choose a "best answer," but, just so you know ... I'm a picky eater ... a "meat and potatoes" kind of gal. I don't really like veggies, especially onion, tomato, peppers, or cruciferous stuff. I always make my own omissions and substitutions in recipes (ie cream of chicken instead of cream of mushroom or onion, etc.), so don't worry about that in your answers, but try to avoid vegetarian recipes ... unless you've got a super macaroni and cheese recipe!! Thanks for your delicious contributions! I really appreciate them all.

Amazing Chicken

2 tablespoons brown sugar
3 tablespoons prepared mustard
4 pork chops
1 tablespoon fresh lemon juice

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C).
In a small bowl, combine the brown sugar and mustard. Mix together well.
Butterfly the pork chops and arrange them in a 9x13 inch baking dish. Spread the mustard mixture over the chops, then sprinkle with the lemon juice. Place about 1/8 of an inch of water in the bottom of the baking dish.
Bake at 325 degrees F (165 degrees C) for 20 minutes, or to desired doneness.

This might be more work than you want but I like this pasta dish. It serves four.
Cooked penne noodles (375 gram package - I use whole wheat for health reasons) mixed with cooked chicken or hamburger meat (as little or much as you want) and 1 28oz can of diced tomatoes. Mix together and put in 350 degree oven for about 45 minutes - this allows the tomato flavour to saturate noodles. Add grated cheese at the end (optional - is very good without) and salt to taste.
Is good as leftover as well.

FRIED BREAD
Combine:
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
ADD:
1 cup milk
Mix well to form a batter.
Heat about a half inch of cooking oil or crisco over medium heat until fairly hot but not smoking.
Pour palm sized portions of batter into pan. Don't crowd.
Cook until lightly browned on both sides.
Serve hot with butter, jam or jelly.

Peanut butter cookies
1 cup smooth OR crunchy peanut butter
1 cup sugar
1 egg
Blend well. Add a small pinch of salt if desired. Roll into 1 inch balls. Place on UNgreased cookie sheet. Flatten with fork. Bake on 350F for 10-13 minutes, or until slightly tanned. Let cool, then remove from baking sheet with spatula. Frost if desired with chocolate frosting. Or whatever flavor. I like chocolate best. Enjoy!

Eggplant parmesan...
All you need is 1. eggplant 2. cheese 3. eggs 4. pasta 5. pasta sauce.
Slice the eggplant, coat in beaten eggs, dip in bread crumbs (i'm considering these a seasoning!), fry in oil until golden brown.
Cook the pasta and pasta sauce.
You can broil the eggplant with cheese or just put the cheese on the eggplant while still hot to melt it.
Easy, quick and delicious.

Orange Orzo Salad Recipe Prep Time: 25 minutes
Cook Time: 10 minutes
A refreshing salad that looks as pleasing as it tastes.
Orange Orzo Salad
Ingredients
- 8 ounces orzo
- 4 tablespoons olive oil
- 4 tablespoons orange juice
- 3 tablespoons grated orange peel
- salt and pepper to taste
- 2 oranges, peeled, cut into sections and chopped
- 1 cup golden raisins
- 1/3 cup chopped green onions
- 2 tablespoons fresh cilantro, chopped
Directions
Cook orzo according to package directions, drain.
Prepare orange vinaigrette: combine olive oil, orange juice and orange peel; mix well.
Add salt and pepper to taste.
Combine orzo, oranges, raisins, green onions, and cilantro in serving bowl.
Add orange vinaigrette, toss to coat.
Chill before serving.
My Grandma's Shoo-Fly Pie (one pie)
INGREDIENTS:
1 (9 inch) pie shell
1 cup molasses
3/4 cup hot water
3/4 teaspoon baking soda
1 egg, beaten
1 1/2 cups all-purpose flour
1 cup packed brown sugar
1/4 cup shortening
DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
To Make Bottom Layer: In a medium bowl combine molasses, hot water, and baking soda. Stir well. Whisk in beaten egg. Pour mixture into pie shell.
To Make Crumb Topping: In a medium bowl combine flour and brown sugar. Mix well, then cut in shortening until mixture resembles coarse crumbs. Sprinkle on top of molasses layer.
Bake in preheated oven for 15 minutes. Lower temperature to 350 degrees F (175 degrees C). Bake an additional 30 minutes.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.
TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream
Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.
Mom's Potato Soup
8-10 large potatoes, peeled and diced
1 large onion, diced
4 stalks celery sliced
Water
6 cups milk
Salt and pepper to taste
In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.
Peach Cobbler
1 Cup self-rise flour
1 Cup granulated sugar
1 Cup milk
1 large can peaches, do not drain
1 stick margarine
Melt margarine in 9x13 dish in oven. Mix flour, sugar and milk into a batter. Pour peaches in, juice too. Pour batter over top and bake in preheated 350 degree oven until top is a golden brown. The other way she taught me was to put the batter in first on top of the margarine, then pour peaches and juice on top and bake.
Orange Soda Ice Cream
1 2liter bottle orange soda
1 can eagle brand sweeten condensed milk ( not evaporated)
Mix well the soda and eagle brand milk in barrel of ice cream freezer. Add desired fruit or leave it plain. Use your electric freezer according to directions and when it is finished, you will have a delicious frozen sorbet type ice cream.

Chili...........Use 2 lbs of chopped meat, 1 green pepper, 1 onion, 2 cans of dark red kidney beans, 2 cans of whole tomato, and 1 pack of chili seasoning......it's really a good thing to make this time of year!!

Pan cooked chicken breasts, can of diced tomates, diced green peppers and onion. Cook the chicken add the rest put over white rice . If you like it spicer add some red pepper flakes.

dark chocolate mousse. i found it in the book "french women dont get fat" by mireille guiliano. very interesting book
(i believe that it makes 3 cup- for 6 people)
4oz dark chocolate
1tbsp sugar
3 egg yokes
5 egg whites
melt the chocolate on a double boiler. add the sugar. add an egg yoke one at a time
beat the egg white until they are stiff glossy peaks. fold into chocolate mixture. cover and refrigerate until it is set ( i usually put it in overnight)
and thats it. i absolutely love it. its very chocolaty and pure. theres no cream, preservatives etc. involved.
