I purchased a fruit mixture at a fair and now I would kill for the recipe. (Unfortunately the fair as moved on) There were chunks of McIntosh apples, green grapes and walnuts in a crème marshmallow type mixture. If anyone has any idea what this is please provide the recipe and the ten points are yours!

None of these is the correct receipe. The dish I had only had walnuts, McIntosh apples, and green grapes.

It's called a Waldorf Salad. It can have either a mayonnaise, whipped cream or sour cream dressing.

I have a question... Did you buy it from a concession of the fair or from the cooking/baking contest area - where individuals bring in their best recipes to compete against other area cooks/bakers? This matters because if it was from the contest section, the recipe is likely brand new - the concoction of someone who lives for winning a ribbon at the fair. In that event, there's no telling.

However, as I've seen most people are leaning toward an ambrosia and waldorf variation, without success. That's where I would have gone, too.

I too, do the fair contest thing - and sweets are my category. So although none of these recipes are an exact match, perhaps one will be a close second for you?

1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 cup plain yogurt
1/4 C lime juice
2 C green grapes, halved
2 C white miniature marshmallows
2 C cubed McIntosh apples (not diced)
1 C chopped walnuts

In large bowl, combine EAGLE BRAND®, yogurt, lime juice; mix well. Stir in remaining ingredients. Chill 2 to 3 hours to blend flavors. If desired, serve in chilled dessert bowl. Refrigerate any leftovers.

3 C cubed McIntosh apples (not diced)
1/2 C apple juice
2 C green grapes, halved
1 cup chopped walnuts
1 cups miniature marshmallows
1 (8 ounce) container sour cream
1/4 C pure maple syrup

In a large bowl, mix together all ingredients except sour cream, until well blended. Then fold in the sour cream. Chill for at least an hour, and stir again before serving. Garnish with a sprinkle of maple sugar.

6 McIntosh apples, pared
2 C cold water
3 T lemon juice, fresh
1 C tiny marshmallows
1/4 C mayonnaise
1 C heavy cream, whipped
1/2 C chopped walnuts

Core pared apples and cubed. Soak in cold water 15 minutes, then pat dry and sprinkle with lemon juice. Combine apple cubes, marshmallows and mayonnaise. Fold in whipped cream. Just before serving, add nuts.

None of these are in any cookbook that I know of.

A Waldorf salad is a salad consisting of apple, nuts (especially walnuts), celery, and mayonnaise or a mayonnaise-based dressing. It was first created in 1896 at the Waldorf-Astoria Hotel in New York by Oscar Tschirky who was the maître d'hôtel. (An alternative theory is that it was created by the Waldorf Lunch System, an early 20th C. lunchroom chain- starting in the 1920's the company logo was an apple.) In 1896 Waldorf Salad appeared in "The Cook Book by "Oscar of the Waldorf". It is traditionally served on lettuce. Dried fruit is often added — usually chopped dates or raisins.

Here is a kosher version of a Waldorf Salad:

5 green and/or red apples
2 stalks celery
1 cup chopped walnuts
1 cup raisins
¼ cup mayonnaise

Core apples. Chop apples and celery into small pieces; add walnuts and raisins. Mix in enough mayonnaise to coat all pieces, approximately ¼ cup.

The only thing missing is the marshmallow mixture.

Ambrosia is a variation on the traditional fruit salad. It contains sour cream, sweetened whipped cream (or whipped topping), pineapple, mandarin oranges and coconut. Some versions also contain bananas or strawberries or miniature marshmallows.

1 (11 ounce) can mandarin oranges
1 (8 ounce) can crushed pineapple, drained
3 bananas, sliced
2 cups flaked coconut
2 cups miniature marshmallows
1 cup pecan pieces
1 (16 ounce) container frozen whipped topping, thawed
1 cup maraschino cherries

In a large bowl, combine mandarin oranges, crushed pineapple, bananas, coconut, marshmallows, and pecan pieces. Fold in whipped topping. Garnish with maraschino cherries. Chill for 1 hour or overnight.

How to Make Classic Waldorf Salad

THIS IS THE BEST WITH THE SOUR CREAM (I promise)


Ingredients:
2 ribs celery (optional)
1/2 c. red grapes (or green)
1/2 c. walnuts
2 apples
1/2 c. mayonnaise
1/4 c. sour cream
1 lemon
1 head horseradish or romaine lettuce


Steps:
1. Cut the white ends off the celery ribs. Use a vegetable peeler to peel off the strings that cover the outside of the ribs.

2. Dice the ribs into 1/4-inch squares.

3. Cut the grapes in half, and use your fingers or a knife to break the walnuts into pieces. (Image 1)

4. Wash, core and dice the apples. (See Tips for apple varieties.) (Image 2)

5. Place the apples, grapes, walnuts and celery in a bowl. Add the mayonnaise and sour cream and stir everything together. Squeeze a few teaspoons of lemon juice in, stir well, and taste - the lemon juice should be almost undetectable. (Image 3)

6. Arrange a large whole inner leaf of romaine on each plate and top each one with a scoop of the salad.

This sounds like a variation on Waldorf Salad. I'm sure you can find the recipe on any good recipe index.
I make a fruit salad with chopped apples, green grapes, chopped walnuts or pecans, miniature marshmallows, miracle whip and a sprinkle of sugar. YUMMY

"Waldorf with a Twist" - 4 servings

2 apples; cored and diced
1 cup seedless grapes; halved
1 cup plain nonfat yogurt
1 celery stalk; diced
1/4 cup walnuts; chopped
2 tablespoons raisins
1 1/2 teaspoons fresh lemon juice (to keep apples from browning)
Ground cinnamon

In a medium bowl, combine the apples, grapes, yogurt, celery, walnuts, raisins and lemon juice; serve, sprinkled with cinnamon.


"Chicken Waldorf Salad" - 4 servings

2 Red Delicious apples; cored and diced
1 tablespoon fresh lime juice
2 cups diced cooked skinless chicken breast
2 cups small seedless grapes; halved
1/4 cup nonfat sour cream
2 teaspoons mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
12 loose-leaf lettuce leaves

In a large bowl, combine the apples and lime juice; toss to coat. Add the chicken, grapes, walnuts, sour cream, mayonnaise, mustard, salt and pepper; toss to combine. Place the lettuce leaves on plates; top with the salad mixture.


"Waldorf Salad" (traditional) - 4 servings

2 medium apples; coarsely chopped (about 2 cups)
2 medium stalks celery; chopped (about 1 cup)
1/2 cup mayonnaise or salad dressing
1/3 cup coarsely chopped nuts

Toss all ingredients. Serve on salad greens if desired.

the guy version:

add a can of fruit medley (the one with a whole bunch of different fruits)
coconut flakes
mini marshmallows
and some whip cream

(all this for less than 5 bux al wal-mart)
