POTATOES 'N' EGGS

Amount Measure Ingredient -- Preparation Method

1 cup frozen hash brown potatoes with -- onions and
peppers
2 slices turkey bacon, cut in 1-inch pieces
1 carton frozen egg product, thawed or 4 eggs
1/8 teaspoon salt
2 tablespoons shredded reduced-fat cheddar cheese
2 tablespoons salsa
In a 1-quart microwave-safe casserole mix potatoes and bacon. Cover and
cook on 100% power (high) for 3 to 5 minutes or till tender, stirring
once. Beat eggs and salt; add to potatoes. Cook uncovered on high for 1
to 3 minutes or till almost set, pushing cooked egg to center after 1
minute, then every 15 seconds. Top with cheese; let stand 1 minute.
Serve with salsa. Serves 2.

heck all you women cooks ----------you dont have to be formal just call it a tater omlet ,,throw in some black olives,dash crushed red pepper,saute oinion,some vevetta cheese,some fresh mushrooms,some chopped green & red bell pepper,some garlic,toss in 1 teaspoon salt,2 tablespoon olive oil, grated potatoes ----------now take all the stuff except the eggs and cheese and saute it in a iron skillett,set this aside add some more olive oil and 4-5 eggs beaten let eggs start to set and put cheese and rest of stuff on top and fold over///////its easier to fold this over if you use a wok type pan to cook the eggs in----serve with a cold glass of white wine ,texas toast,and bacon or sasuage and some black coffee
