3. Steam the lobster until almost done.
4. Then mix with cheese and chives and place in a 16-ounce casserole dish.
5. Heat the chicken stock and cream in a small pot over medium heat.
6. Make a roux with melted butter and flour.
7. Add to the chicken stock and cream while stirring constantly.
8. Cook until the sauce is thick and creamy, add wine and white pepper.

Are these pieces already cooked and frozen or canned? This is what I presume they probably are since I have never seen uncooked lobster pieces anywhere. In which case assuming since they are already cooked all you have to do in blend the meat into cold salads or into hot tomato spaghetti sauces, or into a lobster bisque type of soup. You can also serve the pieces along with a shrimp cocktail type of dipping sauce. It will all work out and be very tasty.

Lobster Fondue Dip
Makes about 1-1/2 cups
2 Tbsp Unsalted Butter
1/3 Cup Dry White Wine
2 Cups Sharp Cheddar Cheese, shredded
5 oz Lobster, cut into small pieces (you can use canned but drain well)
1/4 Tsp Red Pepper Sauce
Serve this hot cheese dip and offer crisp cracker dippers.
Melt butter in pan over low heat. Gradually add and stir in cheese until the cheese is melted. (Cheese butter mixture may appear separated.) Add red pepper sauce; slowly add wine, stirring until mixture is smooth. Add lobster; stir until heated.

Heres one..its simple..its easy...use the Lobster and make a cream sauce..real cream..mushrooms..chives[green onion tops]..parsley...butter..lots of butter..S&P and asparagus spears lightly saute'd......and serve over some buttered pasta of your choice..... with a nice tossed salad and crusty bread..I would go with white wine myself...or champers....Yum.
and to warm just the lobster should only take 2 or 3 minutes in a hot boiling kettle.

The lobster must already be cooked---that's how its sold. Just mix it with some mayo, small amout of diced celery, and a dash of salt. ... toast a hot dog bun in butter, and make a lobster roll with lettuce,,,enjoy
