I've had pancakes before, but I really miss a real good pizza and pastry desserts. Or bread for making and sandwich. Also if you know and good brands....

Okay, how about this

For Pizza

Crust

1 tablespoon dry yeast
2/3 cup brown rice flour or garbanzo/fava bean flour*
1/2 cup + 2 tablespoons tapioca flour
2 teaspoons xanthan gum*
1/2 teaspoon salt
1 teaspoon unflavored gelatin powder (Knox)
1 teaspoon Italian herb seasoning
2/3 cup warm milk (110°) or non-dairy liquid
1/2 teaspoon sugar or honey
1 teaspoon olive oil
1 teaspoon cider vinegar
extra rice flour for sprinkling

Sauce

1 can (8 oz.) tomato sauce
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon crushed dried rosemary
1/2 teaspoon fennel seeds
1/4 teaspoon garlic powder
2 teaspoons sugar
1/2 teaspoon salt

Toppings of your choice

*Available at health food stores by Authentic Foods, Bobs Red Mill, and Ener-G Foods.









Serves 6

Sauce:
Combine all ingredients in small saucepan and bring to boil over medium heat. Reduce heat to low and simmer for 15 minutes, while Pizza Crust is being assembled. Makes about 1 cup.

Crust:
Preheat oven to 425°. In medium mixer bowl using regular beaters (not dough hooks), blend the yeast, flours, xanthan gum, salt, gelatin powder, and Italian seasoning on low speed. Add warm milk, sugar, oil, and vinegar. Beat on high speed for 3 minutes. (If the mixer bounces around the bowl, the dough is too stiff. Add water if necessary, one tablespoon at a time, until dough does not resist beaters.) The dough will resemble soft bread dough. (You may also mix in a bread machine on the dough setting.)

Put mixture on 12-inch pizza pan or baking sheet (for thin, crispy crust), or 11 x 7-inch pan (for deep-dish version) that has been coated with cooking spray. Liberally sprinkle rice flour onto dough, then press dough into pan, continuing to sprinkle dough with flour to prevent sticking to your hands. Make edges thicker to hold the toppings.

Bake pizza crust for 10 minutes. Remove from oven. Top Pizza Crust with sauce and your preferred toppings. Bake for another 20-25 minutes or until top is nicely browned.

DONUT-HOLES ( A basic donut)

1 Cup Authentic Foods Pancake & Muffin Mix

1/2 Cup of Maple Sugar

1 Tablespoons of Corn Oil

1 Egg

1/4 Cup of Milk

In a bowl, mix Pancake & Muffin Mix with maple sugar. In another bowl, combine oil, eggs, milk, and beat. Add the liquid to the dry ingredients and mix. Pour vegetable oil into a pan approximately 1 inch deep and heat to a minimum of 350 degrees. Make small size balls ( 1.2 inch) and fry for 2 to 3 minutes until golden brown.

LEMON MERINGUE CAKE

1 package of Authentic Foods Lemon Cake Mix.

Lemon Filling

2 large eggs 6 tablespoons of fresh lemon juice
3 egg yolks 1 tablespoon of finely grated lemon zest
½ cup sugar 6 tablespoons unsalted butter, chilled and cut into 6 pieces



In 1½ quart heavy bottom saucepan, whisk briefly to combine eggs, egg yolks, sugar, lemon juice, and lemon zest. Add pieces of butter and place saucepan over medium heat, stirring constantly. Cook mixture without boiling until it begins to thicken. Remove from heat and pour through stainless sieve into bowl.

Cover surface with plastic wrap and vent to allow the steam to escape while cooling. Refrigerate (mixture will thicken). Will fill one layer cake.

If you like lasagne, try your favorite lasagne recipe, but use zuchini sliced the long way in place of the noodles. You absolutely will not be able to taste a difference. Very yummy.

I searched and found quite a bit of yummy recipes. Here's a couple I chose that sound delicious :)

Gluten-Free Peanut Butter, Banana and Chocolate Chip Muffins

3 bananas
2 eggs
1/2 cup raw sugar
1/2 cup creamy peanut butter
1 3/4 cups white rice flour
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup butter or shortening (melted)
1/2 cup buttermilk*
1/2 cup chocolate chips*

* If dairy products are a problem, substitute 1/2 cup rice milk mixed with one teaspoon lemon juice for buttermilk, and use dairy-free chocolate chips.

Preheat oven to 350 degrees F.

Mix first four ingredients in a food processor. Blend for one minute. Combine dry ingredients in a mixing bowl. When thoroughly mixed, add to food processor, along with the butter and milk. Blend well. Add the chocolate chips, and press "pulse" once or twice. Ladle the batter into muffin tins lined with papers, filling each paper to the top. Bake for about 12 minutes, or until muffins are firm to the touch. Cool and serve. Top with frosting or chocolate drizzles, if desired.

Gluten-Free Chocolate Chip Cookies

3/4 cup butter, softened
1 1/4 cups packed brown sugar
1/4 cup granulated sugar
1 teaspoon gluten-free vanilla extract
1/4 cup egg substitute
2 1/4 cups gluten-free baking mix
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3/4 pound semi-sweet chocolate chips

Preheat oven to 375 degrees F. Prepare a greased baking sheet.

In a medium bowl, cream butter and sugar. Gradually add replacer eggs and vanilla extract while mixing.

Sift together gluten-free flour mix, baking soda, baking powder and salt. Stir into the butter mixture until blended. Finally, stir in the chocolate chips.

Using a teaspoon, drop cookies 2 inches apart on prepared baking sheet. Bake in preheated oven for 6 to 8 minutes or until light brown.

Let cookies cool on baking sheet for two minutes before removing to wire racks.

Shepherd's Meatloaf

Ingredients

1 lb lean chuck beef
2 T diced onion
1 t salt
1 cooked potato(medium), mashed
1 egg
1/2 t garlic powder
1/2 lb fresh mushrooms (sliced or 1 can drained)

Directions

In an 8-inch loaf pan, mix meat, onion, salt, potato, garlic powder and egg, thoroughly and form loaf. Firmly press mushroom slices over entire surface of loaf. Bake at 350 degrees for about 1 hour. Slice and serve.

Spicy Beef and Macaroni

Ingredients

1 lb ground beef
2 c water
1 medium onion, diced
2 c GF elbow macaroni
1 green pepper, diced
1 c GF barbecue sauce
1/4 c grated Parmesan cheese (optional)

Directions

In a deep skillet, brown the meat. Add the diced onion and green pepper; cook until tender. Stir in water, macaroni and barbecue sauce.

Cover and simmer until macaroni is tender, 6 to 8 minutes. If desired, stir in or top with cheese.

not really but i can tell where you might go go to WGN/RADIO.COM and scroll down STEVE&JOHNNIE and click on ther page(he only eats gluton free) because he has ciliac disease i be tyou can find links to stores and stuff you can buy and cook
