This is, by far, the best meatloaf ever.
I don't like meatloaf, but I LOVE this stuff!!
You can also substitute ground turkey, but it isn't quite as good.
Barbeque Meatloaf
1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.
Cook's Note: Try serving as a sandwich with mayonnaise.

ground beef
salt & pepper to taste
parmesean cheese start with 1/2 cup to 1 cup
3 eggs
bread crumbs about 1/2-1/ cup
1/2 cup milk
1 tbsp mustard
lots of parsley dry or fresh
some chopped onion done very finely
NO PEPPERS (they overpower the meatloaf)
Mix well and shape into rectangle in your pan
pour 1-2 cans of tomato sauce over the top
cover with foil /poke fork holes to allow for steam
I usually make a 4 pound meatloaf for 3 teenage boys and husband so for all of the ingrediants you will have to adapt for your needs.
This is an old italian recipe and so the measurements are not specific. Rule of thumb is to begin with small amounts and add until you feel satisfied.

1/2 cup milk
1 egg
1-1/2 lb ground beef
1/2 cup grated onion

1/2 cup grated carrots
In a large bowl, pour in milk, beat the egg in well, then add bread cubes. Mix bread with liquid until it is almost dissolved. Add beef, cheese, onions and carrots and mix together really well. Put in a meat loaf pan, pressing well to make the loaf firm.
Sauce:
1/2 cup Ketsup
1 tsp mustard
1/4 cup brown sugar
1 tsp green relish
Mix ingredients together, pour over top of loaf and let drizzle down sides. Bake in oven @ 375 approximately 35-45 minutes till done. Cooking time varies as to how well done you like it

1/2 large onion, finely chopped
2 pounds lean ground beef
2 tablespoons Worcestershire sauce, divided
1/2 cup Italian-seasoned breadcrumbs
1/3 cup ketchup
2 teaspoons Creole seasoning
1 teaspoon Greek seasoning
1 teaspoon garlic powder

Ok..I am a good cook, but I don't measure..so I will give you approximate measurements... But here is a killer meatloaf recipe.
2 lbs. Ground sirloin
1 1/2 bagsCrushed ceasar salad croutons
2 eggs
chopped onion (big vidalia is best)
chopped celery (1 or 2 branches)
minced garlic (I use the pre-minced and it is about 2 TABLE spoons worth.)
cinnamon (3 or 4 teaspoons)
oregano (2 teaspoons)
basil (hopefully fresh...but..well lots and if it is fresh coarsly chop it so that you can actually see large chunks of it in the meat)
1 small can of tomato paste
sea salt (little more than a pinch)
balsamic vinegar (1/4 cup)
Mix it all very well in a big bowl until it is the consistancy of cookie batter. If it is too loose add oatmeal or more croutons/bread crumbs.
Put in loaf pans. Cook until firm (350 for about 45/50 min-- if you try to put it all in one loaf pan it takes too long to cook) Just before it is done Make the topping.
Dijon Mustard (1/4 cup)
Ketchup (1/4 cup)
Balsamic vinegar (1TABLE spoon)
Brown Sugar (1 TABLE spoon) --mix well
Put on top for the last 5 min of cooking time
