NANCY's ITALIAN BEAN SALAD:
1 large green pepper, sliced in strips
2 small onions, sliced thin
1 medium can chick beans, rinsed - drained
1 medium can kidney beans, rinsed - drained
1 medium can cannellini beans, rinsed - drained
1 small can string beans, rinsed - drained
1 small can wax beans, rinsed - drained
1 small can lima beans, rinsed- drained
1/3 cup oil
2/3 cup white vinegar
1 cup sugar
1/2 teaspoon salt
1/4 teaspoon pepper
In large bowl, mix together beans with peppers and onions. In small bowl whisk oil, vinegar, sugar, salt and pepper. Add dressing over beans. Toss to coat. Cover. Refrigerate. MARINADE OVERNIGHT.
MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.
HOME-STYLE SCALLOPED POTATOES:
5 Tablespoons butter or margarine
5 Tablespoons all-purpose flour
1-1/4 teaspoons salt
1/2 teaspoon pepper
5 cups milk
6 cups potatoes, peeled, thinly sliced
1 onion, sliced
In a large saucepan, melt butter; stir in flour, salt and pepper until blended to make a paste. Add milk. Gradually stirring, bring to a boil; cook for 2 minutes or until sauce is thickened.
Place layer of potatoes and onions in a greased 3-qt. baking dish. Pour sauce over potatoes. Repeat layers. Bake, uncovered, at 350 degrees for 60-70 minutes or until potatoes are tender and top is lightly browned.
OLGA's CORN FRITTERS:
2 eggs (yolks separated from whites)
1 cup fresh corn kernels or drained can corn
1/2 cup flour
1/2 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
dash paprika
Beat egg yolks well. Beat in corn kernels. Sift, then measure flour. Resift with baking powder, sugar, salt and paprika. Mix dry ingredients with yolk mixture. Beat egg whites stiff but not dry. Fold egg whites gently into yolk mixture. Fry spoonfuls of batter on a greased griddle or skillet until golden brown. Serve with butter.

Black Bean Salad
Ingredients:
3 cups dried black beans, soaked and cooked
3-4 ears corn, cooked and cut off the cob
1-3 bell peppers, preferably yellow or red
juice and grated rind of 1 orange
balsamic vinegar
herbs and/or spices
Directions:
Mix everything together, and let sit for flavors to mix. This time I seasoned it with finely chopped fresh ginger and fresh thyme; other times I've used rosemary and thyme (because that's what I had fresh); there are probably dozens of tasty combinations. I have only the vaguest idea of how much balsamic vinegar I used, since I didn't measure it; it was at least 1/4 cup but probably more; I just went by taste.
I served it as a salad (it makes lots; I've been using this all year as a potluck dish) but it is also good heated and served over rice (that's what I did with the leftovers).

Vegetable casserole
* 1 can French-style green beans, drained
* 1 cup celery, chopped
* 1/2 cup sour cream
* 1 can cream of celery soup
* 1 can shoe peg corn, drained
* 1 cup green pepper, chopped
* 1/2 cup cheddar cheese, grated (or more)
* .
* Topping:
* 3/4 cup crushed Ritz or butter crackers
* 3 tablespoons melted butter
PREPARATION:
Combine first 7 ingredients and put in a greased casserole dish. Combine topping ingredients and sprinkle evenly over vegetable mixture. Bake at 350° for 45 minutes.
Serves 8.

I have a recipe for a cheesy potato dish. It calls for 1 bag frozen hashbrowns, 1 can cream chick. soup, 1 carton french onion dip, and 2 cups cheddar cheese. Mix these ingrediantes. Place in casserole dish and bake at 350 for 1.25 hours. Verry good.

Creamy Cucumbers
3-4 medium cucumbers
1/2 red onion, sliced thin
1-1 1/2 cups Hidden Valley Ranch (or cucumber ranch) dressing
Combine all ingredients in a bowl, chill well before serving.
Butter Bean Salad
2 cans butter beans, rinsed and drained, 15 ounces each
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin, 1/3 palm full
2 tablespoons extra virgin olive oil
1 large lemon, juiced
Coarse salt and freshly ground black pepper
Combine all ingredients in a medium bowl. Toss to coat beans and vegetables evenly in dressing.
Linguine pasta salad
1 lb. linguine, cooked and cooled (or other pasta)
1 bottle creamy italian dressing
1 pkg. kraft cheddar cubes
1/2 pkg. sliced pepperoni
2 tomatoes, diced
1 medium cucumber, peeled and diced
Combine all ingredients in large bowl and toss. Chill before serving.

Potato Casserole
2 lb. frozen hash brown potatoes
1/2 c. melted butter
1 can cream of chicken soup or cream of mushroom
1/2 c. chopped onion
2 c. sour cream
2 c. grated cheddar cheese
corn flake crumbs
Thaw potatoes, mix all ingrediants except corn flakes. Sprinkle the corn flake crumbs on top of casserole and back at 350 for 45 minutes in a 9x13 pan.
Super yummy and not hard to make.

i got the perfect dish its easy and quick you can use eggplant , spinach , squash , or brocoli as follows::::
cook vegetable , drain and add 1/2 stick margine while hot set aside you can put some chopped green pepper if u have some
2cups crackers crumbs
2 cups shredded chedder cheese
1/2 cup chopped onions
tbls salt
teas black pepper
2 cups milk
2 eggs beaten
combine everything in casserole dish reserve 1/4 cup chees for top-----bake till center rises 350 45min
add cheese bake till top is brown its always better the next day

Orange Orzo Salad
Ingredients
- 8 ounces orzo
- 4 tablespoons olive oil
- 4 tablespoons orange juice
- 3 tablespoons grated orange peel
- salt and pepper to taste
- 2 oranges, peeled, cut into sections and chopped
- 1 cup golden raisins
- 1/3 cup chopped green onions
- 2 tablespoons fresh cilantro, chopped
Directions
Cook orzo according to package directions, drain.
Prepare orange vinaigrette: combine olive oil, orange juice and orange peel; mix well.
Add salt and pepper to taste.
Combine orzo, oranges, raisins, green onions, and cilantro in serving bowl.
Add orange vinaigrette, toss to coat.
Chill before serving.
