I'm allergic to milk, and I know things are extracted from milk. Like whey and sodium caseinate for example. The reason I'm concerned is "lact" usually means milk. And both sodium and potassium lactates are in the bacon we usually buy.

I'm allergic to milk, not lactose-intolerant. From what I read, there's a difference. Like the Lacto-Free Cheese still has milk, so even though it is lactose free I cannot have it. I now know sodium lactate does not cause allergic reactions, but I still need to know about potassium lactate.

They come from the fermentation of lactose (milk sugar) by microorganisms. They taste sour and are why milk tastes sour when it goes bad. You shouldn't have a problem with lactates as they are completely different from lactose. Did you know that your muscles produce lactic acid when you exercise strenuously? That is also where you get sore muscles because of the lactic acid produced when your muscles burn sugar anaerobically (without oxygen).

I think they do come from milk, but let me tell you something I know about people who are lactose intolerant. My mom is lactose intolerant, but somehow she was able to develop a kind-of immunity to the allergy. I'm not sure how she did it, and I don't think she's completely over it, but I know that she does have milk and dairy products more often then she used to, and she doesn't get sick. I don't know, just something to ask your doctor about I guess. Good Luck!!! I hope I answered your question!

People that are Lactose intolerant are alergic to the "Lactose" in milk which scientifically the ending of "ose" indicates a form of sugar (like glucose, fructose ...). If you are lactose intolerant, your immune system responds to the specifc structure of Lactose which is totally different from lactate. The last "ATE" in lactate indicates a different molecule and your immune system will not recognize it.

These answers suck because the person asking the question IS NOT lactose intolerant -- he is allergic to milk, which is totally different. When you are allergic to dairy, you have a reaction to the proteins in it, not to the lactose.
