i promised my boyfriend a 'feast' haha. any good ideas? i was thinking maybe hamburgers minus the roll, and baked mac and cheese. help!

I watched Robin Miller make this this morning on food channel and it looks very easy:

This what I am making for dinner tonight:

Spaghetti Carbonara:

16 ounces spaghetti
1 cup chopped turkey bacon or regular bacon
1/2 cup chopped onion
2 to 3 cloves garlic, minced
1 teaspoon dried oregano
2 tablespoons all-purpose flour
1 1/2 cups lowfat milk
1/2 cup lowfat or nonfat sour cream
1/4 cup grated Parmesan
1/4 cup chopped fresh parsley leaves
Salt and ground black pepper

Cook spaghetti according to package directions. Meanwhile, cook bacon in a large skillet over medium-high heat until golden brown. Add onion and garlic and saute 3 minutes, until onion is soft. Add oregano and cook 1 minute. Add flour and stir to coat onion. Add milk and bring to a simmer. Cook 5 minutes, until sauce thickens, stirring frequently.
Remove from heat and stir in sour cream, Parmesan and parsley. Season, to taste, with salt and black pepper. Drain pasta and toss with sauce to coat. Serve.


Added comment:

I have noticed that several answers concern easy convient menus - if this is what you want - this is what I would do:

Buy a already cooked roasted chicken from grocery store (in Deli)
buy stouffers green bean casserole (in freezer section)
buy country crock prepared mashed potatoes in a tub (in refrigerator section)
buy a Mrs. Smith Dutch apple pie (in freezer section) - when you baked this pie add a little extra sugar and cinammon to the crumb mixture on top on pie before baking.

Put chicken on a platter, after cooking frozen green bean casserole put in serving bowl, heat potatoes and put in a serving bowl - so everything looks homemade and like you slaved in the kitchen all day. Put some bowls and pots in sink like they have been rinsed and ready to go in dishwasher! Ha!;)

P.S. - suff all the boxes and containers down the the garbage can - make sure it is covered with other trash! He will never know - and I won't tell!:)

Spaghetti? Tacos? Eggs? Grilled cheese and soup? My mom usually makes those when she's too lazy to cook a big meal. Otherwise maybe you can make this casarole I call Shepard's Pie (although that's not really what it is) Get a dish and fill the bottom with mashed potatoes Put mixed veggies and beef gravy on top. Put cooked beef on top. Bake at 325 for about 20 minutes Top with shredded colby jack cheese Bake until cheese melts Otherwise maybe this dish called Yum Yum Brown beef Drain grease Put 1 cup of water and 1 cup of rice into the pan with the meat Stir every few minutes Cook until rice is tender Add 1 can mushroom soup and 1 can green beans Mix, with heat still on. Serve when warm.

Make some Spicy Quesadillas. Grill 2-3 breasts of chicken, cut then into slices, then on a pancake girriling pan, grill the flour tortillas at low heat, add some shredded cheddar or mozzarella cheese on top of the tortilla. On one half of the tortilla (i prefer the right side) add on handful ofo the chopped up chicken. Dont take too long to do this because if the heat is too high, the tortilla will get hard and it will be cumbersome to fold. well after you're added the chicken put some hot sauce on top, you might wanna add it with a spoon as to spead it evenly, dont add too much unless you love spicy food. then fold the chickenless half of the tortilla over the chicken half.. increase the heat only a little so the chease will melt entirely.... and so the out side is kind of crusty....
i love this recipe, highly recommend it.

READ THIS 3 TIMES BEFORE YOU TRY TO DO IT

STIR FRY - one of my favorites.

A wok would be ideal but a big skillet or large saute pan would work well too. I recommend actually stirring and not too much pan tossing until you get the hang of it. It wouldn't be good to fling food all over the place. A good knife is good to have too. Stir fry can be accompanied by rice or noodles. Choose one you prefer. Rice does take some skill to make right. A rice cooker is an easy way out for that. There about $25 and very handy. OK, moving along. I start any any stir fry with 3 things.

Garlic(minced), Ginger(minced or grated) and Hot Chili Pepper(minced)(serrano, thai, jalapeno...)

About a 1/2 teaspoon of each is a good start, you can adjust to your tastes. Carefull with the peppers, wash your hands before you hurt your eyes, etc.

Ok, canola is a good basic oil. You can add a little sesame oil if you want but it's a bit strong for some.

Have your pan good and hot, then add about 1 oz of oil. You don't need any depth to the oil really, just enough to coat the bottom or the pan lightly. To that add the galic, pepper and ginger. This is to flavor the oil you are about to cook your food with.

This takes some control here - DO NOT BURN THIS. If you do, start over. The scorched taste will get into everything. Just let the stuff mingle for about 15 seconds. Stir it or shake the pan. Just don't splatter hot oil on you.

After that you add the meat (beef, chicken, shrimp...)
Stir a little. Brief periods of sitting still will add the nice seared flavor. Cook that till near done (fully cook before eating)

Then add your fresh vegetables(carrot, celery, cabbage, bell peppers, etc)Have them ready to go - washed and cut into bites. Cook till tender.

If you want you can get some canned baby corn, bamboo shoots or water chestnuts to add towards the end.(drain first) They're cooked so just need to get them hot.

By this time the meat and all should be fully cooked.

Through out the process add kosher salt or soy sauce as needed to your taste

Noodles take about 8 minutes
Rice takes about 22 minutes
The stir fry cooks for about 8 minutes
So just time the things to get to the table hot at the same time




It's really very simple with a little practice-enjoy

OMG, for the same amount of time you can make an impressive fab dinner:
- Take two chicken breasts and pound them between two plasic bags until flat (easier than it sounds)
- Dredge them in flour and a little salt
- Fry in a little oil
- pour a can of condensed cream of mushrooms on it with enough milk to make a thick sauce.
- Put lid on and simmer until ready to eat.
- serve with ready made garlic bread from your grocery store (ask them where they keep it) and a ready to go salad.

Grab some candles and Ragu and noodles, add french bread, White wine and dine.....Enjoy a super Italian dinner topped off with some angel-food cake and fruit (strawberries or blueberries work good)
Your BF will enjoy and other sparks should ignite

how about sloppy joes heat ground meat in a skillet till done then put in Hunts manwich sauce.Drain the grease from skillet before adding then just mix . Add potatoes chips and ice tea makes agreat meal

What about salad with chicken that you can instantly heat up in a conventional oven or microwave?? That with any kind of salad sauce, (i prefer Ranch) makes it tasty..
