Smoked Salmon Pate
This is a super simple appetizer. You can make it at a moments notice, or a day before. Any leftover pate makes a great sandwich too.
Ingredients:
1/4 pound smoked salmon
1 can (7 oz.) red salmon
1 package (4 oz.) cream cheese
1/4 cup butter, softened
Directions:
Combine all ingredients in food processor, and process until smooth. Pack into a serving dish. Store in the fridge.
Serve with crackers or small pieces of bread to spread it on. Add capers or dill to garnish if desired.

You could make a smoked salmon dip
1 cup of shredded salmon
1 bar of cream cheese
1/2 cup of lemon juice
9 - 12 drops of Tabasco sauce
in a mixer,mix all of the ingredients til you get a creamy texture. Chill overnight. this is good on Ritz crackers

It makes a nice omelette, as previously stated, put in a food processor and mixed with cream cheese for nice spread for bagels, add a touch of dill for a different taste.
Cooking it to much changes the taste, a simple tea sandwich with watercress. It is so rich and filling alot goes along ways, but if you keep it store air tight, in the frig, in plastic, or a disposable container, it does tend to linger on anything good.

you could make canapes or a smoked salmon mousse. Look up some recipes, I don't know any off the top of my head

We mix the salmon with cream cheese, capers, and red onion, then use as sandwich or wrap filling, or to stuff an omelet. Good too for crackers or bagels!

Smoked Salmon Cheesecake
2 cups French bread cubes
1/2 cup toasted walnuts
1/2 cup melted butter
1/2 cup Swiss or Gruyere Cheese, grated
1 Tablespoon fresh dill, minced
1 onion, chopped
3 tablespoons butter
1-3/4 lb. cream cheese
1/2 lb. Swiss cheese, grated
1/3 cup whipping cream
1/2 teaspoon salt
1/4 teaspoon pepper
4 eggs
1/2 lb. smoked salmon
Red caviar as a garnish
Combine first five (5) ingredients and process in blender or food processor until crumbled. Press onto bottom and up the sides of a greased spring-form pan. Refrigerate. Saute
onion in butter until tender. Cream the cream cheese. Beat in onion, Swiss, whipped cream, salt and pepper. Add eggs, one at a time, beating briefly after each addition. Fold in salmon. Pour into crust. Bake at 350 degrees F for 45 minutes. Garnish with fresh dill and red caviar.

SMOKED SALMON DIP
1/2 lb. smoked salmon

2 tbsp. sour cream
1 tbsp. mayonnaise
juice of 1 lemon
1 tsp. tabasco
1/2 tsp. pepper
1/4 tsp. dill
pinch of paprika
Flake salmon, add remaining ingredients, blend.
