I like King Oscar best. Norwegian, two-layered, cross-packed, in olive oil, but they've gotten hard to find in my area. So now any kind with those features. Theyre the smallest and most expensive. Always get the cross-packed if they have them.

what i do i will make a brime
olive oil,pepper corn's colliander( seeds and fresh) whole black pepper,dried chiles (japones)
oregano,cider vinagar,cummin-seed,basil,tarragon,sage , and dill weed .
combine all ingridients and heat to a boil ,reduce heat and add some balsamic-vinigar or a cup of hearty-port-wine-reduce to a point where you coat a spoon then ,add more vinigar and olive oil (your taste ((eye-appettite)) ) in a saucepan re-simmer the brine and add the sardie's heat for about 20-minute's or until the skin's turn a silverish-black turn and heat for 1-minute more turn off heat remove and cover ---let stand about 3-5 minutes
prepare your favorite sauce ,mustard,honey pine-nut ,more olive oilw/garlic,cayenne , tabasco,it's a world out there join in !!!!
