Back then, if he was wearing undies, and he would be when going to the Temple, though not necessarily everywhere else, it would probably be a breech cloth somewhat along the lines of those commonly added to the art which depicts in him on the cross. A strip of fabric that goes under the areas prone to soil the clothes from the occassional drip or flatuence or missed spot when eliminating (they usually used their fingers, as is common custom in some parts of the middle east even today, of the left hand, which is why they shook hands in greeting and ate with their right hand). He likely wore that to protect his clothes because cloth was all hand-made and comparatively expensive. You can see that in his direction to the disciples when they went out, not to take two sets of clothing--they didn't want the rich among them, like Matthew, to appear rich and pretentious.
The temple worker's garb included some undies that were akin to the long-legged briefs, because of a prohibition in the law about their "nakedness" under their robes when going into the Temple, so he probably would have used the more covering briefs today in formal attire, but the boxers when out and about.
