Prince Clarence did it. The attacks stopped after he was locked away in an asylum.

Jack the Ripper is a pseudonym given to an unidentified serial killer (or killers) active in the largely impoverished Whitechapel area and adjacent districts of London in the latter half of 1888. The name is taken from a letter to the Central News Agency by someone claiming to be the murderer, published at the time of the killings.
Victims were women earning income as casual prostitutes. Typical Ripper murders were perpetrated in a public or semi-public place; the victim's throat was cut, after which the cadaver was subjected to abdominal and sometimes other mutilations such as those found in lust murder. Many now believe that the victims were first strangled in order to silence them. Due to the nature of the wounds on some presumed Ripper victims, several of whom had internal organs removed, it has been proposed that the killer had a degree of surgical or medical skill, or was perhaps a butcher.

As far as entertainment goes, I like From Hell. Personally, I don't think the Royal Family had anything to do with it and evidences supporting that theory are pretty shakey and dubious at best. Who would have believed some prostitutes with obvious motive to blackmail any way? Not the most credible theory.
Freemasons? The star supposedly from connecting the map locations of the victims, the manner in which the victims were killed, and the word Juwes have nothing whatsoever to do with Freemasonry.
While I may not know who it was, I eliminate those two possibilities. The newest "Case Closed" book has the best articulated response, IMHO.

I've read a few books and poked around in this subject and I think Francis Thompson is the best suspect. He was crazy enough and had the intellect and medical training to pull it off. He was also in the area at the time of the killings.
Here's the Wikipeida article on him:
Francis Thompson
Francis Thompson (December 18, 1859–1907), poet. Perceived as devoted to Catholicism, he was a member of the Aesthetic movement. On 1889 he wrote the short story "Finis Coronat Opus" (Latin: "The End Crowns the Work"). It features a young poet sacrificing women to the pagan gods, seeking hell's inspiration for his poetry in order to gain the fame he desires. He is alternatively seen as a religious fanatic or a madman committing the actions described in his story. In 1877 Thompson failed the priesthood. In the Autumn of 1878 Thompson entered his name on the Manchester Royal Infirmary register. The infirmary, in which he studied for the next six years as a surgeon, required that its students have a strong physique for the grueling workload. The study of anatomy, with dissection classes, was a major part of study from the first semester. Between 1885 to 1888 Francis Thompson spent the majority of his time as a homeless vagrant living in the Docklands south of Whitechapel. Thompson tried his hands at a number of occupations. As well as a surgeon and a priest, Thompson tried being a soldier, but was dismissed for failing in drill. He also worked in a medical factory. This may have been where, apart from his years as a surgeon, Thompson procured the dissecting scalpel which he claimed to have possessed when he wrote to the editor of the ‘Merry England’ in January of 1889 of his need to swap to a razor for shaving.
