Cook them the way you would bake a white potatoe.
Try this recipe, it's really good.

4 garnet yam (sweet potatoes)
3 tablespoons granulated sugar
1 1/2 teaspoons cinnamon
1/2 cup whipped butter

1. Preheat oven to 400F.
2. Bake yams for 45 to 75 minutes (bigger yams take longer to cook).
3. When they are done, the outside will have darkened and the inside will be soft.
4. You may see liquid from the potato oozing out and charring.
5. When the potato is sliced open, the inside of the skin will be charred black from the caramelizing sugar in the potato.
6. This is a perfectly cooked potato.
7. Mix the sugar and cinnamon together and set aside.
8. To serve, slice a potato down the center.
9. Add two Tbs of whipped butter, then sprinkle some cinnamon/sugar over the top.

Baked Sweet Potatoes With Sour Cream and Brown Sugar:

Serves 4

Rubbing a touch of vegetable oil on the potato before baking will add a nice sheen to the skin.

4 medium sweet potatoes(about 2 1/2 pounds)

1 tablespoon vegetable oil

Salt and freshly ground black pepper

1/2 cup sour cream

4 teaspoons dark-brown sugar

1. Heat oven to 400°. Line a baking sheet with parchment paper or aluminum foil, and set aside. Rub potatoes with vegetable oil, and place on the prepared baking sheet. Bake in the oven until the potatoes can be easily pierced with a knife, 40 to 45 minutes.

2. Slit potatoes open lengthwise, and sprinkle with salt and pepper. Top with a generous dollop of sour cream, sprinkle with dark-brown sugar, and serve immediately.

Preheat oven to 400 degrees, wash potatoes and prick potatoes a few times with a fork. Place on baking sheet (you don't have to wrap in foil) and bake 50 to 60 minutes or until soft.

If you have a microwave, you can cook potatoes on high 5 to 8 minutes or until soft.

Wrap the sweet potatoes tightly in 2 layers of aluminum foil and roast them in the oven until very
soft, about 1 hour and 15 to 20 minutes. Remove from the oven and allow to cool.

In a bowl, stir the graham cracker crumbs and brown sugar until well combined. Add the butter and
mix until the crumbs are evenly moistened. Press firmly and evenly on the bottom and sides of a
9-inch pie plate to create a crust, being sure there are no cracks. Bake in the oven for 10 minutes
or until golden. Remove from the oven.

Meanwhile, make the filling: Unwrap the potatoes and peel them. Put the flesh into a bowl and mash
well with a fork. Add the eggs, 1/2 cup brown sugar, cream, flour, cinnamon, nutmeg, and vanilla and
whip until very smooth with a whisk. Pour the filling into the partially baked crust. Sprinkle about
1 tablespoon brown sugar over top and bake in the center of the oven until set, about 40 minutes.
Allow the pie to cool completely before cutting. Serve at room temperature.

Do not wrap in aluminum foil - and bake just like you bake a regular potato. I just put mine on cookie sheet, prick, bake at 425 for 1 hour.

Wrapping potatoes in aluminum foil steams them - it does not bake them. If you want a steamed potato - then wrap. If you want baked do not wrap. Two different textures of cooked potato when steamed or baked.:)

I use a metal skewer through the centre of them to speed up the cooking time, and cook them for abiut 40mins in a 200C oven. They are truly delicious also as wedges, just slice into wedges, put on a baking tray, drizzle with olive oil and bake for 30-35 mins.
