Mmm The Best Chocolate Chip Cookies:
INGREDIENTS:
1 cup butter flavored shortening
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups milk chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla .Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Dont over-bake and to prevent cookies going to flat chill the dough for 30 minutes or so (while you preheat) by letting it get cold the dough goes better on the sheet and stays roundish

Steps:
1. Stir together flour, baking soda and salt. Do not sift.
2. Beat the butter until creamy, then add the sugars and vanilla and stir them in until combined.
3. Add the egg and yolk one at a time, mixing well after each addition.
4. Stir in flour mixture. Stop stirring the instant it has all been incorporated.
5. Stir in chocolate chips, making sure to distribute them evenly.
6. Form dough in a log, wrap it and chill it for at least 30 minutes.
7. Heat the oven to 350 degrees and line some cookie sheets with baking parchment.
8. Cut dough into thin rounds or form into cookies, place on baking sheets.
9. Bake for 10 minutes or until the edges begin to turn golden.
Tips:
The thicker the cookie sheet you use the better, or use two sheets stacked on top of each other. This allows the cookies to cook as evenly as possible without browning the bottoms too fast.
Use the highest quality chocolate chips you can find, or use evenly chopped pieces of semisweet chocolate.
Chilling the dough is an important step. It allows the flour to relax, the sugars to partially dissolve and the flavors to begin to come together. You can chill the dough for a day or two or freeze for several weeks.
Try substituting turbinado sugar for the granulated sugar, but then use light brown sugar.
For variety, add chopped nuts, such as walnuts or pecans.

Makes about 3 dozen
2 Cups all-purpose flour

2 sticks (1 cup) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed dark-brown sugar
2 teaspoons pure vanilla extract
1 large whole egg, plus 1 large egg white
12 ounces semisweet chocolate chips (about 2 cups)
1. Preheat oven to 375°, with racks in upper and lower thirds. Line two large baking sheets with parchment paper; set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and both sugars on medium speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl as needed.
2. Add vanilla, whole egg, and egg white. Beat on low speed until well combined, scraping down sides of the bowl as needed, about 1 minute. Add flour mixture in two batches; mix until just combined. Mix in chocolate chips.
3. Shape 2 heaping tablespoons of dough at a time into balls and place about 1 1/2 inches apart on prepared baking sheets. Bake, rotating sheets halfway through, until cookies are golden brown, about 18 minutes. Transfer parchment and cookies to a wire rack to cool completely. Cookies can be kept in an airtight container at room temperature for up to 4 days.

I always use the recipe on the back of the choc. chip bag and they always turn out delicious. I usually double the walnuts though.
