To make it better the method of frying is probably the most important thing other than the type of oil. Cut the eggplant into slices and sprinkle them with salt - let them sit for half an hour to draw the excess water out of them, and then place the slices on towels or paper towels and smash, twist, squeeze and anything else you'd like to try to get all the water outta them and then coat an fry them the way you like. Eliminating the excess water before you fry will make all the difference, and I prefer the taste of olive oil in cooking if it doesn't interfere with the taste of other added ingredients. Good luck!

1 eggplant
2 garlic cloves
2 ounces fresh lemon juice
2 tablespoons tahini
1/2 bunch parsley -- leaves only
Salt -- to taste
Freshly-ground black pepper -- to taste
Pierce some holes in the skin of the eggplant (to avoid explosion) and grill over medium-high heat turning every 7 minutes, until the skin is blackened and the body is nice and soft. Total time for grilling is about 30 minutes. If you do not have a grill you can roast your eggplant in a 375 degree oven for about 30 minutes.
Remove eggplant from the grill and let cool.
Once the eggplant is cool enough to handle, peel away the skin and discard. Place the eggplant flesh in a colander and drain for 10 minutes.
In a food processor, combine garlic, lemon juice, tahini and parsley and pulse to combine. Add the eggplant flesh. Season with salt and pepper and pulse to combine. Adjust the flavor with more Tahini or lemon juice if you prefer. If it's bitter, some sugar or honey will help. Research shows that the white variety of plant is sweeter in flavor.
This recipe yields 1 cup.

Slice the eggplant and soak it in cold water for about half an hour. This will remove some of the bitterness.
I like it cut in cubes and cooked with olive oil and tomatoes. Maybe some onion and garlic. Put that over pasta and add some cheese... yummy. We eat this a lot at our house.
It's also good fried (in any kind of oil, whatever you like). Slice it in rings and batter it. Egg/milk/flour. Salt when you take it out of the oil. Great!

My favorite way to eat eggplant is grilled.
Toss to lightly coat in olive oil, add some garlic, throw on the grill. When you flip it over to cook the other side, top it with a slice of tomato and a slice of fresh mozzerella. Delicious!

frying eggplant in olive oil is ok but if you salt the slices and let them drain for about 15 to 20 Min's it will take some of the bitterness out of them. try after draining them wash off the salt and dry and rub a little olive oil on the slices,then place under a salamander or grill and make crisp,then serve with a sligthly spiced tomato sauce or a garlic,spinach sauce. i hope you enjoy

Yes it is. You can fry eggplant along with potatoes and then add some pepper and salt to taste. Garnish with cilantro.
Or Roast the above in an oven.
Or make a curry, with eggplant, potatoes, onions, tomato, ginger, garlic, salt, oil, mustard seeds, turmeric powder and red chilli powder, and eat with plain rice
Even fry them like a corn dog

To rid eggplant of that "nasty" taste simply slice the eggplant - lay slices on paper towels - generously salt the slices - cover with another piece of paper towel. Wait approx. 15 minutes (if you have the time). This will wick out the excess moisture and the tanins in the product. Pat the slices dry and then proceed with your favorite recipe.

The best way to make the eggplant a better taste is to boil it to lessen the smell and prepare 2 eggs in a bowl. Dip the eggplant on the bowl and pry it after.Voila!

Here is my favorite of all time. Prepare a mixture of your favorite meatloaf recipe. Then cut your eggplant in half lenghthwise and scoop out part of the inside and chop it up and add it to you meatloaf mixture. Then stuff both eggplant halves with the meatloaf mixture and bake. For more variety you also can cover the eggplant halves with your favorite tomato sauce. It is terrific and makes for a combo meat and veggie meal all in one dish.
