they bite, we had to dissect one before and i used a styro for the dish. anyway, when we have disassembled its body parts we saw a small part of styro locked in its mouth (mandibles, or whatever they call it, it was four years ago). ok, it was an evidence of torture but what you saw doesn't seem like a grasshopper.(maybe a scorpion?). i don't know about defense but it camouflages(?) itself. besides it can hop away from you whenever you try to get near.

That's no grasshopper you saw and I have no knowledge of an insect with a tail ending in a pincer appearance.

Grasshoppers do bite or at least try to. Their mouths open and close and if your finger is there, it will get pinched or bitten as that is what the grasshopper is trying to do.
The thing on its tail if for mating.

A grasshopper's defense is hopping away from danger. They are totally harmless to people.
