i am trying to make some good pork & beef sauages

How to Make Sausage
You will need:
6 Pounds of coarsely ground lean pork
2 Tablespoons of fennel seed
1/4 cup of chopped parsley
4 Tablespoons of chopped basil
1 Tablespoon of oregano
Hank of sausage casing
Sausage funnel

Preparation:
Mix all of the ingredients in a large bowl
Wet the casing and slide the casing over the funnel
Tie a knot in the end of the casing
Push the mixture down the funnel with your fingers
You can tie the sausage into links or let it run in one piece.
Or you can do without the casings and make pan sausage with it.

Makes about 20 stuffed mushrooms

Ingredients:

2 pounds fresh mushrooms, washed and drained
2 packages precooked sausage patties
1/2 envelope onion soup mix
2 tablespoons vegetable oil
2 tablespoons parsley, chopped
1/2 teaspoon sage

Preparation:

Remove mushroom stems from caps. Chop stems. Set aside caps and stems. Prepare sausage according to package directions. Drain and crumble.

In a large bowl, combine sausage, chopped mushroom stems, onion soup mix, oil, parsley, and sage. Mix well. Heap mixture into mushroom caps. (Filled caps can be frozen at this point). Scantly cover the bottom of a shallow baking pan with water. Arrange mushrooms so filling is on top.

Cover and bake at 350 degrees F for 40 minutes. Remove cover and bake for an additional 10 minutes.
