Depending on the amount of oil you use, you can do different things. If I have a little bit, I will pour it into an old coffee can or a vegetable can and freeze it, then throw it out with the trash. If you have a lot of it, I would consider seperating it into several containers and freezing it or throw it outside. Don't wash it down your sink as it can create some problems for you at a later date. It's less expensive to throw it out on the lawn or to freeze it than to pay someone to come and fix your sink!

It actually can be recycled just like used motor oil. Really. I worked at a Household Hazardous Waste center, and we would poor the oil right off into the motor oil. The vendor told us it was fine to do that.

Most councils will pick it up (for a price) and dispose of it correctly. They do not advocate chucking it down the sink / loo, as it can cause problems with blockages. If you have a friendly fish and chip shop nearby, they'll have regular disposal pickups and may take yours from you. Just buy some chips. :)

at home pour it into an old pop bottle and drop it in the bin. dont pour it down the sink...

if its commercial, advertise it, biodiesel is made from this, and peeps always want free oil. just put a note in the shop window.

I fill the sink with hot soapy water, pour the oil in and then pull the plug out. It all goes away then with no mess or residue.

Put it into a sealed container and put it in the bin. Whatever you do - do not put it down the sink. Oil and fat eventually solidifies and blocks sewers.
