We like to cut potatoes into wedges, toss with EVOO and garlic, cut some onions into wedges, slice sausages into hunks, and add salt, pepper, and any fresh herbs from the garden. Cover with foil and bake until potato wedges are tender. Simple and easy-great for the days when I don't have a lot of time. You can also roast some other veggies in a separate pan for a side dish, too.
Also, another hurry-up meal is to grill several (we do this ahead of time, on a weekend when we are home) and then just reheat in microwave. Make a sausage burrito, adding whatever cheeses/condiments go with the type of sausages, and roll up in a tortilla. Sort of like a tortilla hot dog. You can also use the rest of the sausages by mixing them with baked beans and baking for a bit.
If you like Reuben sandwiches, slice the sausages (after cooking), put in a casserole dish, put sauerkraut on the bottom layer, then sausages, then swiss cheese, and bake.
I know these may not be too exciting to most, but as sausage fiends, we love 'em!

Sausage and beans casserole,then put grated cheese on top with grilled tomato slices.Or cook the sausages,make some mashed potatoes and mix some mustard in with the mash,then split the sausages,not all the way through, and pipe in the mash mix. Sorry,can't think of anything exciting...don't think there is anything new you can turn sausages into

They go just great with mashed potatoes!
Also - after cooking, carefully slice the sausages lengthwise, place on bread or sourdough bun with Dijon mustard, slices of Cheddar cheese - excellent sandwich!
Pancakes with sausages and cheese - also a great breakfast!
(As others have noted, chopped sausages go excellently as pizza toppings, burrito ingredients and I even add them to my "somewhat famous" 5 cheese, 5 meat lasagna)

if you slice the sausage up into small pieces and then cook it with pasta and a small can of tomato paste and a small amount of tomato and basil salad dressing, it is very good. I got it out of a cook book from kraft and we have had it about 5 times now with sweet and hot sausage.

sausage and veggie stir fry
any type of sausage
cook in order:
sausage
shredded cabbage [ or cut]
baby carrots,
when almost done
add romaine lettuce
cooked black beans
mushrooms
baby corn
peas
zucchini
season to taste
you also can add cooked rice or pasta.
add a little soy sauce and enjoy it is great and you will go back for seconds

my father in law makes sausage & peppers &
we always love it. fry the peppers in oil until they
soften & then serve them w/ the sausage on a
roll. Enjoy!
