Bombay Vada Pav
Ingredients
1 Kg boiled Potatoes
2 cups Gram Flour (Besan)
Turmeric powder
Oil for frying
Salt as per the taste.
Pav (A kind of bun known as Pav. Usually the outer surface is little rough, looks like a burger bun but smaller than that. Check for the proper one in your groceries. Do not buy sweet pav as it will spoil the taste.)
Masala:
1 small piece Ginger
4-5 flakes Garlic
4-5 nos. Green Chillies
1/2 cup Coriander leaves (chopped)
For tempering :
1 tea spoon Turmeric Powder
Curry Leaves
1 teaspoon Mustard seeds & 2 teaspoon Oil
Method :
Grind ginger, garlic and green chillies together into a paste.
Peel and mash boiled potatoes.
Add ginger-garlic-green chilies paste, coriander leaves, and salt to it.
Then take 2 teaspoon of oil in a kadai. Add mustard seeds. As soon as they start spluttering, add turmeric powder & curry leaves. Pour this tempering on the potato mixture & mix it properly.
Make small balls of this potato mixture. ( You can make flat balls by pressing them in palms)
Now add some salt & turmeric powder to the gram flour . Mix it together. Add some water to make a thick batter. Remove the lumps.
Heat some oil in a pan. Dip the balls in gram flour and deep fry till golden brown.
Slit the Pav keeping the base intact & spread Garlic Chutney or Green Chutney on the inner sides of it. Place the vada into it. And enjoy the Indian Burger!

If I have choice between MacD burger and Vada pao( aka poor man's burger), I would pick Vada pao any day.When I was posted to Mumbai, My driver would take me to Mattugodi market and I would sit on the pavement and eat freshly made Vada pao in a soft bun with lots of chilli mint sauce. I certainly would have diarrhoea in the evening after eating Vada pao..but enjoy now suffer late was the motto then.
I don't know how to make the soft bun or the chilli mint chutney. But I learned how to make the Vada
Ingredients
250 gm potato..boiled, skinned and mashed
1 onion chopped fine
1 inch ginger chopped fine
a small bunch of coriander leaves chopped
6 green chillies chopped fine
1/2 t spn mustard seeds
1 tbl spn oil
for the batter
1 cup of besan(chickpea flour)
1/4 cup rice flour
1 t spn baking soda
1 t spn chilli powder
a pinch of asafoetida powder
3/4 cup water
salt.
oil for deep frying
Mix all the ingredients for the batter and make a smooth batter. Keep aside.
In a fry pan, heat oil, add mustard when it finished spluttering add the ginger, onion and greenchilli. Saute till the onion is light brown. Take it off from fire. Add the onion mix, coriander leaves, salt, turmeric and mix well with the mashed potato. Make in to small patties 2 inch in diameter and 1/2 inch thick.
Heat oil for deep frying. Dip the potato patty in the batter, coat well and deep fry till it is golden brown. Serve hot with chilli sauce.

3 big potatoes

1/2 inch piece of ginger
3 green chilis
a handful of coriander leaves
1/2 tsp haldi
salt and sugar to taste
1/2 lemon
For the batter
1 cup besan
a pinch of soda-bi-carb
1/2 tsp haldi
1 tsp chili powder
salt to taste
a pinch of hing
vegetable oil for deep frying
Pav
Round shaped bread or dinner rolls; the ones available in Mumbai are usually made from sour dough.
Method
Boil and mash the potatoes. Grind together the ingredients for the paste and mix with the mashed potatoes. Make round balls of the potato mixture (about the size of table tennis balls).
Prepare the batter of besan. Take care not to add too much water.
Heat the oil until its hot enough to brown the batter (test it with little droplets of batter).
When the oil is hot, dip the balls of potato in the batter, and fry. Place the fried Vada on absorbent kitchen paper to remove excess oil.
Slice the Pav in half, spread on it any chutney or none whatsover. Place vada between the slices and serve immediately. Some finely chopped onions go well with this

Mash boiled potatoes with green chillies and onions, add salt and make balls out of this mixture dip in besan and deep fry. Cut the pao in half sprinkle red chutney powder and place one of the vadas inside.

Look If we try a lot but the Vada Pao at the " Lari " is the best. And if u try for so many times but u will be unable to make it like them.

Buy a potato wada and, a pao. Cut 3/4th of the pao, horizontally. Sandwich the pao. Use one or two green chilly(optional).
voila!!! Your wada pao is ready.
