heh...
sexily.
peel it one tear at a time from the skin, languidly and slow. Then place the banana in your mouth deeply, then pull it back slowly, letting the teeth graze just on the edge of the fruit, then back then forth. If the head hunters value this tactic, you will never be mistreated by head hunters again. And really if head hunters are handing you a banana, I think that right there speaks volumes about what your job would be.
Seriously though, if you are filling this question out for a job interview....it really screams for something funny and unexpected. Or atleast I see it that way. If the interviewer has this question on their application for the applicant, it's a job I would never keep, seriously. It's not worth my time. If they want to reveiw me on my credentials and references I have no issues with it, but when they start asking me hypothetical questions about banana's and headhunters, they will earn my wrath.
Never take bananas from head hunters, when you are a city kid and never take sh-t from a job interviewer if you are a blue collar working stiff like the rest of us...workers are a dime a dozen, and easily replaceable.
Someone else mentioned they were an interviewer themself. If the interviewer asks a question like that it is a trick. I do not value tricks. It's a stupid question.
If the question asked is how would you eat a banana that's different than what would do if you were handed a banana. Don't confuse the two.

I'd wait until the interview was completed before I ate the banana, making sure to thank you for the banana.
A) It is impolite to talk with your mouth full.
B) I would not want to take the chance that a small piece of banana could get stuck on my teeth.
C) There is also a chance that I could cough some of it up.
D) I would not want banana breath.
E) Most importantly, I do not know the proper etiquette for eating a banana during an interview.

This is a serious question and could affect your assessment and one of many you could be tested on.
What do you think the assessor will think of you if you start to eat a banana or indeed anything whilst being assessed.
The best way around this would be to accept the banana and thank the person, then put it aside and tell them you will eat it when you have lunch or, later in the day.
This would not be about how you eat it but would you eat it in front of the assessor which would lose you the job

Stand upside down.
Put a powerful fan on your feet.
Peel the banana and push the skin in an upward direction.
Open your mouth.
Take a bite.
While closing your lips swallow quickly.
Proceed to the end.
Remove the fan.
Stand upright and swallow again.
Cough and breathe normally.
Now you are ready to eat another.
Did you enjoy that?

I peel it completely then bite off chunks from the top & work my way down.
A friend of mine peels it completely then nibbles along from left to right, so eating a quarter at a time. He repeats this until the entire banan is gone. He says it tastes better that way.

Peel from the stalk end and either put the empty skin over my head as a trophy or on the ground for the headhunter to slip on...

As banana makes me projectile-vomit, this could get messy for the interviewer! Are you sure you want me to proceed?
