i've been longing to eat kimchi....

just type "recipe for kimchi" in the search box from any website and you'll get thousands of different kimchi recipes. my husband loves kimchi and so far he is on his fifth recipe from the internet. one kimchi recipe takes him approx 3 mos to finish eating.good luck.

Just remember that kimchi is really just fermented cabbage (or any other vegetable you wish to use, as Koreans make all kinds of kimchi, not just cabbage). And as such, because the fermentation process takes a while, it will take a while before your kimchi is ready.

Traditional Korean kimchi is usually buried in the ground and left for a month or more, so it's up to you how spicy you want to make it (by the way, I'm Korean, so I like it really spicy :P)
