My boyfriend can't have any kind of animal products.. Dairy , meat etc.. I need some good recipes with veggies, potatos, etc..
I am running out of ideas and I love to cook..

The onion soup potatos are the best!
HE can't have any dairy products either,,, Sort puts a limit to what I can do..

I recently found a web site describing the worlds healthiest foods - most of them are fruit and vegetables. They have a recipe site with some really excellent vegetarian dishes, that are easy to make and very tasty. Have a look here: http://www.whfoods.com/recipestoc.php#recipes
The recipe for braised kidney beans and sweet potato was very tasty -
I have copied it from their website:
1 medium onion, chopped
4 medium cloves garlic, chopped
1 TBS fresh ginger, chopped
1 medium carrot, sliced thin
1 medium green bell pepper, cut in 1 inch squares
2 cups sweet potatoes, cut in 1 inch cubes
2 cups crimini mushrooms, sliced medium thick
½ tsp cinnamon
1 tsp red chili powder
1 tsp paprika
1 TBS tomato paste
2 cups + 1 TBS vegetable broth
15 oz can kidney beans, drained
salt & black pepper to taste
Prepare first 6 ingredients by chopping and slicing.
Heat 1 TBS broth in a medium to large soup or braising pot. Healthy Sauté onion in broth over medium heat for 4-5 minutes, stirring frequently, until translucent. Add garlic, ginger, carrot, pepper, sweet potatoes, and mushrooms. Continue to sauté for another 5 minutes, stirring frequently.
Add spices and mix thoroughly. Mix tomato paste and broth together and add. Cover and simmer on low for about 30 minutes stirring occasionally. Add beans, salt, pepper, and continue to cook for another 5 minutes on medium heat uncovered, or until vegetables are tender. This is our Stovetop Braising cooking method.

This is more of a side dish but get a pack of Campbell's "onion soup" and follow the recipe for the Roasted Potatoes....they are the BOMB!!! Good luck

My mom makes some really good meatless lasagna, mac and cheese, stuffed squash, stir fry, god girl just think! There are TONS of things out there for veggies ( I am a veggie as well ). I could go on and on just get creative with it! Or go to your local bookstore like Barnes and Noble and look through their recipe books you are bound to find some good eats!

I'm assuming you know how to do standard veggie dishes and are looking for things to supply protein. I would suggest you learn to cook with tofu,various recipes using legumes(beans) and grains(must be eaten together for complete protein) and nuts. "Diet For a Small Planet" is a great reference for this,with dozens of recipes and guides to help ensure proper nutrition from a meatless diet. Good luck to you both.
