My kids have always eaten well, but I started them out early with fruits and veggies. We grow a garden where they can pick their own and they eat fresh better than store bought. They get excited when they see where it comes from and everything tastes better fresh.
I also make my kids take three bites of anything to "try it out." I offer the same or similar foods over again so that they get a real taste for it.
Kids will be kids, and they will like most things and hate some, so try to respect their opinion, but offer veggies often and they will eventually come around.

Tell him or her that Elmo eats all his vegetables. That may make your child want to mimic someone or some chahacter they look up to. (I just gave Elmo as an example!) I had to say a prayer to get my little niece to eat veggies.. lol, but fortunately as she got older she started liking them on her own. BTW, soccer mom has some really excellent advice! She has some great ideas.

make them fun, arrange them in pretty shapes and funny faces.
put vegetables on his plate but if he doesn't like them, don't force him. kids' tastes change over time and as he gets older you can reason with him more that vegies are good for you. we have a rule, "you have to try it at least" and if you don't like it then that's fine -- the last thing you want to do is fight over food. you want to keep things positive.
if your child doesn't like to eat "undoctored" vegies, then try sprinkling cheddar cheese on the vegies, like broccoli & cauliflower. dark green leafy vegies can be creamed and taste pretty good like that (but don't eat spinach from the bag this week because of the E.coli alert). sweet potatoes are really vitamin-rich and can be made into french fries (sliced and baked in the oven on high heat), or baked whole and mashed up with a little bit of butter.. yummm....! worst comes to worst, you can slip the vegies secretly into stuff like meatloaf, casseroles and mac & cheese. but then you aren't really teaching him to appreciate the deliciousness of vegetables :-)
oh, finally here's a game we play in our family -- but it'll probably work with older kids better. my wife will usually say, "oh, don't eat your vegetables because you'll be bigger than me! and I don't want to be the shortest one in the family!" I'll play the other side and say "c'mon and eat your vegetables so we can be bigger than Mommy! and I need you to get big so I can have someone to play baseball with", etc. Then you make a big deal when he eats one, like "Oh no, he ate a vegetable, I'm going to be the shortest one now..." and start crying. Kid will start laughing and eating vegies

Make it fun. My son watches Nick JR while I get dressed and there is a cartoon called Charlie and Lola. Charlie gets Lola to eat her veggies by telling her they are something fun. An example is peas were asteroids from outer space/or alien food. Mashed potatoes were clouds. Try making it fun and allow your child to use their imagination.

Try organic dehydrated veggie sticks from a health food store if your child won't eat cooked ones. Try raw veggies, my grandson loves frozen peas still frozen, cut carrot slices into little star shapes, make it appealing.

Kids love to mimic their parents. Take a bite to show your child that it's not icky. Maybe, just maybe, your child will then eat it. This works for my 14 month old.

When I make veggies I tell my daughter that she can't have them. I do this for a couple of times. By the time I give in she is dieing to try them. It works for us. Plus I will tell her she has to have 3 bits. One to try , One to decide, and One to make sure.

good luck.i hated veges when i was young and grew up to like them.when my kids were small they liked very few but as they grew up they liked them more ..i think ever child hates Vegas, just keep trying i don.t think their is no magic spell for kids to eat their Vegas.. sorry i couldn't help.
