"Boss" is an informal work for an employer or supervisor. A Dean is the person in charge of a School or College within a university (such as a Medical School or School or Education). Therefore, for the people who work within that School or College (professors, secretaries, etc.), the Dean is their boss, but the word boss is a lot broader and could apply to a lot of other settings as well.

A dean is the head of a department in a college or university. A boss is your boss at work!
