CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

oooh ooooh oooh I just made this!! It's my version of yakisoba: Brown tofu/chicken whatever protein Add vegetables (ie broccoli, chopped carrots, peas, peapods etc) While this is cooking (on low!!) get a block or 2 (depending on how much you need to make) of ramen noodles (the cheap kind!) and parboil (that's fancy restaurant speak for cook mostly) while STILL IN THE BLOCK, ie don't break them up in the water. I find waving em for a minute and a half does the trick. Take the WHOLE BLOCK and put it in with the veggies/protein and stir it up really well. This is one of those situations where a wok comes in handy. Then add the seasoning or your own soy sauce-esque creation, stir and serve!! you might need to add water, but it's pretty easy to tell if you do. Also, using aluminum foil and making bakeable packets is really easy and fast, use stuff like chicken with some herbs and zucchini, broccoli and carrots. Remember that raw chicken has lots of germs though so don't mix it with anything before it's cooked!!

Stir Fry chicken with Hokkien Noodles . .Get some soy sauce 2 table spoons,oyster sauce 1 table spoon ,fresh ginger grated ,garlic minced and chicken stock half a cup will do.Make a sauce out of this. Brown the chicken in a wok,add sauce let it cook for a couple of mins. Prepare your noodles as per packet instructions. Add some veges I use carrot,broccoli,snow peas cabsicum whatever takes your fancy. Let the vegies cook briefly add the noodles and presto.
Add some chili too if there's no kids. Enjoy. I made that recipe up and we all love it.

Fastest ever..........
Boil a big pot of water, and add about 2 cups of spiral noodles. Set timer for 5 mins. While that is boiling, cut up 2 boneless skinless chicken breasts into 1/4 inch cubes, and panfry in olive oil, salt and pepper until cooked through. When timer goes, add 1 1kg bag of frozen mixed vegetables to the noodles. Bring back to a boil, and cook another 5 mins, or until veggies and noodles are cooked. Drain the veggies and noodles, stir in the chicken and add 1/2 cup italian salad dressing.
Dead easy, low-fat and covers 3 food groups......not bad for a 10 minute supper!!

My boyfriend Vinnie and I make this 2-3 times a month...
For each soupbowl: crush a packet of Top Ramen (any brand)
add its flavor packet
a pinch of red pepper flakes
a dollop of crushed garlic (comes in a jar)
1/2 cup of chopped cooked chicken
Microwave on High 5 min., sprinkle with chopped scallions and serve.

Easy Chicken Parmesan:
Prep Time: 5 min
Total Time: 40 min
Makes: 6 servings
1 jar (26 oz.) spaghetti sauce
6 Tbsp. KRAFT 100% Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.)
1-1/2 cups KRAFT Shredded Mozzarella Cheese
PREHEAT oven to 375°F. Pour sauce into 13x9-inch baking dish. Carefully stir in 4 Tbsp. (1/4 cup) of the Parmesan cheese. Add chicken; turn over to evenly coat both sides with sauce. Cover with foil.
BAKE 30 min. Uncover.
TOP with mozzarella cheese and remaining 2 Tbsp. Parmesan cheese; continue baking 5 min. or until chicken is cooked through and cheese is melted.

Indonesian soy chicken (fast)
-400 gram chicken
-veg oil
-1 large green or red onion
-2 fingers of crushed garlic
-1 tomato, sliced
-soy sauce
-1 tablespoon fish sauce (or substitute with salt)
-1/2 teaspoon nutmeg
stirfry onion, garlic, an nutmeg in oil till fragrant. add chicken and stir to let the meat cook a bit. squirt a generous amount of soy sauce, add tomato and fish sauce, add water. cover and simmer over med-low heat. serve with steamed rice and sliced cucumber.
Tip: If you don't eat rice, substitute by adding potatoes and carrots to the stew. This also works with beef (cut in thin slices)

dont know if this is something you would like but it is one of my family's favorites...
it calls for ground beef
about a pound or pound and a half
and a can of refried beans
brown your beef ( scramble)
then drain any excess off and add the can of refried beans
mix well and cook on a low simmer for just about 5 minutes
(sometimes i even add a jar of salsa at this stage)
use this as the filling for burritoes
large fresh flour tortillas
sour cream
lettuce tomato onion to garnish
picante sauce
shredded cheese
we love building our own with these things and it takes about 20 minutes to throw the whole dinner together.............tops
