I am making a pot roast for my grandmother and I wanted to make a couple of side dishes to go with it. The only problem is I have no idea what goes with pot roast since it already has potatoes and carrots in it. Does anyone have any ideas on some side dishes?

That's a nice meal right there.....add rolls, biscuits or bread. Elderly people really don't eat a lot of food anyways. Save room for the dessert.

Cut up some carrots, red potatoes, and halve two onions. Sprikle them around the Pot Roast with some olive oil, salt & pepper, they come out delicious.

Green beans, corn, salad. But depending on the size of the roast you can have a pot roast onmy with the potatoes and carrots

My husband loves garlic mashed potatoes with his pot roast. I throw my roast, garlic cloves, carrots, celery, parsley, and onions in the pot with my roast. I like to make my pot roast in a roaster with a rack. If you're going to mash your potatoes it's better if they're not boiled in the meat juice. Once the potatoes and garlic cloves are fork tender I remove them from the pan and place them in a mixing bowl. You add some pepper, salt, milk, and butter to the potatoes and garlic then mash. right before serving I like to sprinkle some shredded sharp cheddar cheese on the mashed potatoes. Yum! Another twist on roasted mashed potatoes is to throw in some Hidden Valley ranch mix.

I'd make gravy with the drippings and mash the potatoes. A homemade loaf of bread would go nicely, too.

Potatoes, carrots, and onions are my side dishes when I make a pot roast. I also serve dinner rolls and brown gravy with it. Now my mouth is watering! This is one of my favorite meals.

REMEMber the green bean casserol at thanksgiving? That goes so well with pot roast.DONT 4 get some nice rolls+ butter.
