OHhh, thank you for reminding me about swedish meatballs! They are so yummy, especially since it's fall now :)
Here's a couple different takes on the recipe.
Swedish Meatballs
8 slices white bread
1 cup heavy cream
3 eggs
1/2 cup diced onion
1/4 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1 tablespoon beef base
1/2 teaspoon chopped garlic
2 1/2 pounds ground chuck
Preheat the oven to 450 degrees F.
Place the bread slices in a large mixing bowl and dampen with heavy cream. Once bread is soaked through, add the rest of the ingredients, except the meat, and mix well. Mix in the meat. Roll the mixture into 1-inch meatballs and bake, uncovered, on a lightly greased baking pan for 45 minutes.
Serve the meatballs hot, with gravy if desired.
Easy Meatballs
1-1/2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Pork
2 eggs, lightly beaten
1 small onion, finely chopped
1-1/4 cups water
1 jar (12 oz.) beef gravy
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
PREHEAT oven to 400°F. Mix meat, stuffing mix, eggs, onion and water until well blended. Shape into 32 meatballs, each about 1 inch in diameter. Place half of the meatballs in single layer in each of 2 foil-lined 13x9-inch baking pans.
BAKE 20 min. or until cooked through.
MIX beef gravy and sour cream in large saucepan. Add meatballs; mix lightly. Cook on low heat 5 min. or until sauce is heated through, stirring occasionally.
Traditional Swedish Meatballs
1 cup fresh bread crumbs, dried out
3/4 cup milk
6 tablespoons unsalted butter
4 shallots, minced
2 garlic cloves, minced
1 teaspoon caraway seeds, toasted and ground
Kosher salt and freshly ground white pepper
1 pound ground beef
1 pound ground pork
1 large egg
1 handful fresh flat-leaf parsley, chopped, plus more for garnish
1 handful fresh dill, chopped
2 tablespoons all-purpose flour
11/2 cups chicken broth
3/4 cup sour cream
1/4 cup lingonberry or red currant jam, plus more for serving
In a small bowl, combine the bread crumbs and the milk; stir with a fork and let stand for 5 minutes. Put 3 tablespoons of the butter in a small skillet and let it melt over medium heat. Add the shallots, garlic, and caraway; season with salt and pepper. Saute until softened but not browned, about 2 minutes. Put the ground beef and pork in a large bowl. Add the sweated shallot mixture, egg, parsley, and dill; season with salt and pepper. Squeeze the milk out of the soaked bread crumbs, add the bread to the meat mixture, and mix well using your hands. Pinch off about 1/2 cup worth of the meat mixture and roll it around in your moistened hands to shape it into a cue ball-sized meatball. Continue forming the meatballs and putting them on a platter; there should be about 20 meatballs.
Melt 2 tablespoons of the butter in a large skillet over moderate heat. When the foam starts to subside, add the meatballs in batches so you don't overcrowd the pan. Saute the meatballs until well-browned on all sides, about 7 minutes total. Remove the meatballs to a platter lined with paper towels as they are done.
Discard most of the fat from the skillet and return it to the heat. Add the remaining tablespoon of butter and swirl it around to coat the pan. Sprinkle in the flour, and stir with a wooden spoon to dissolve into the fat. Pour in the chicken broth, and stir with a wooden spoon to loosen the bits from the bottom of the pan. Simmer and stir until the liquid is reduced and a sauce starts to form; season with salt and pepper. Lower the heat and stir in the sour cream. Return the meatballs to the sauce and stir in 1/4 cup of the lingonberry jam until combined. Simmer until the sauce thickens slightly and the meatballs are heated through, about 15 to 20 minutes. Shower with chopped parsley and transfer to a serving bowl. Serve the Swedish meatballs with additional lingonberry jam on the side.

3.. Mix all ingredients for the meatballs together. Shape into balls. Place on
cookie sheet.
4.. Bake for 10 minutes or until browned.
5.. Remove meatballs from oven and place in a casserole dish.
6.. Turn oven temperature to 350؛F.
7.. TO MAKE THE SAUCE:.
8.. Stir together ingredients for the sauce and combine with the meatballs in the casserole.
9.. Bake, covered, for 1 hour.
10.. Let stand covered for 10 minutes before serving.

INGREDIENTS:

1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon dry mustard
1 tablespoon soy sauce
1 clove garlic, minced
2 teaspoons salt

Sauce:
2 cans Cream of Mushroom soup
1 cup sour cream
1 teaspoon Worcestershire sauce
1 dash Tabasco sauce
1/4 cup milk
PREPARATION:
Mix all ingredients together for the meat mixture. Shape into small meatballs and place on baking sheet or jelly roll pan. Make sure you use a pan with sides. Bake at 375° 45 to 60 minutes, or until browned. In a medium bowl mix sauce ingredients together
Place meatballs and sauce in a crockpot. Cook on HIGH for 30 to 45 minutes, until meatballs are cooked through. May be used as main dish served over rice or noodles or as an appetizer served with toothpicks.

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
Bake at 350 degrees F (175 degrees C) for about 20 minutes.
Drain meatballs on paper towels, if needed. Then place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.
